Thanks Greg! Greg, you could actually do this with most any type of fish. Down here we actually make a smoked mullet dip, but I didn't won't to do a video of that, since many viewers would not have access to mullet.

Thank you Fred! I'm not quite sure on the cost of a Grill Dome, but I think they run about $850 with shipping included, give or take a few dollars. I don't know what you were looking at, but I am a Saints fan LOL! :D I live only a little over an hour from New Orleans, even though I'm in Mississippi, but the Saints have been my team since they became a franchise. Ron, most people will sear Tuna and eat it some what rare, but for this recipe, I wanted to bring it up to 140 internal so it was barely done, because of what it was being used for. Overall this recipe kicks major butt! Really good stuff, and I promise your friends will love you for it ;)

I'm making this today for a party. but what you think your smoker temp was at? i dont want to cook it to fast or to long and get to much smoke on it.

I ran the Grill Dome at 225 degrees, and pulled the tuna at 140 degrees internal temp. You could pull them off starting at 125 if you prefer them a little rare, but for this recipe, 140 works great

I suppose you could, but I can't guarantee it would be the same using liquid smoke. Something about real smoke infusing into the tuna is hard to match or beat.

Lyndon, normally down here it's done with smoked mullet, or Biloxi bacon as it's referred to here, but since this is for KZbin, I wanted to choose a fish that is more readily available in more places. I think your going to like it Lyndon ;)

Now Rus, we both know you can tuna piano, but you can't tuna fish ;0 (sorry, couldn't resist :eek: :) But this recipe looks pretty well tuned! I love fresh tuna on the grill, but I've never tried a slow smoked tuna version (fresh caught trout is excellent for smoking too) In many recipes that may call for canned fish, using fresh (trout, tuna or salmon) sure does kick it up a notch or two! You've given me (once again) food for thought, as I attempt to dip my cracker into the screen! (didn't work out the way I thought, btw...:( Cheers, Bro!

Normally when I cook tuna steaks, I sear them, but in order to have smoked tuna, I elected to do a slow cook to let that one chunk of apple wood do it's thang, lol!
