Is there any reason why you use only one rack in the smoker?? Why not just load er up?? Great video.

most people use a mix of brown sugar and kosher salt at a ratio of 4 parts sugar to i part salt and dry brine for 8 hours or so you can also baste them in the last half hour of cooking with some honey and a few chili flakes are nice as well

sorry i forgot to say you rinse the fish off after the 8 hours and than allow to dry at least overnight
