Your brine recipe is identical to the one I use. I learned it from a steelhead guide. I like your tip of allowing the fish to dry after rinsing off the brine so the fish absorbs the smoke better. I have always immediately put the fish in the smoker. While people always rave about my smoked salmon I think your tip will only make it better.

Flavor profile is different with woods, my family has always used alder and hickory when smoking fish

Greetings from Thornton Colorado!! Snowing here for some reason. Haven’t seen any crab videos lately,do you have the crabs LoL. Great video and awesome background poster. Seafood out here is really expensive, so you see it but don’t usually buy. Had smoked sturgeon before and that was awesome too. You ever make Gravlax? I swear I am going to make it up there some time with my girl. She says if I go fishing one more time she will leave me. Man am I going to miss her. Keep up the good work.

I had it cranked and it would max out at about 200. It was an old analog Bradley and had 20 years of smoke residue in it. Lol I would smoke at 200-225

A few hours to a couple days of brine is ok. You can smoke it immediately, just rinse and pat dry.

Hey Brent, you "hooked" us (my wife and I) with just the title and the picture !! Almost just hopped in the truck and headed your way, instead of watching the video. We both love fish and fishing, especially Salmon. Sad part is living in Maine the only Salmon available here is farm raised, and that stuff is nasty compared to line caught. I actually watched this 2 days ago and have been on the puter checking out commercial places that ship, and charters/lodging in your area. We are both retired, and it's on our bucket list to do. Before I get too much older anyway. Day comes that I can't hold a beer and a pole at the same time,,,, gonna unfortunately have to give up the pole! LOL If I may ask, if you, or anyone in "The Crew' didn't have a boat, which charter/charters would you recommend, near or including reasonable lodging. Just asking cuz you know the area. Great video, you made it look easy. Thanks,,,, Mark. oh tell Ron my 1st attempt at shoulder bacon went in the rub and bags today. Will let ya know how it comes out. Thanks

Sorry about not getting back to you guys sooner, my notification thingy has been acting up for about a week or so, spent 2 days dinking with it and is good for now. Great country ,Yes, serving I wasn't against it by any means, but I kinda had to. In the early 70's, Vietnam Era, the draft was still in effect. Soooooo, get drafted with NO say in regards to future, or enlist and can still pick Branch, and also guaranteed "A" school. That was a no brainer. As far as Adventure?, well, the day an X truck driver, now a 2nd class and an instructor teaching gas engine repair was reading off all of our duty assignments, when he called out my name, and the next words off his lips were, and I QUOTE, "who did you piss off!" First words that came to my mind was UH OH. I got orders to a place known as "The Rock", Adak Alaska, a delightful little island in the north Pacific, in the Aleutian Islands, isolated duty to say the least, who's median annual temperature is 37 balmy degree's, and there was NO TREES, NO SUNSHINE, NO WOMEN FOR A YEAR!!!! and yes, according all popular belief and military Intel, there WAS an Eskimo girl behind every tree!!! Did I tell ya about the "year" I was drunk!!! LOL Have never regretted going, met a lot of great people, caribou and Ptarmigan hunting, sea. run Dolly Varden trout in most of the streams, great times. Thanks for the offer to "hit ya up", it's on my bucket list. Look forward to someday swapping war stories over a cold 1, or 2, or 12. Thanks,,,,, Mark

I did your brine method on some blue fin tuna. I was wonderful just like the salmon and halibut. Thanks for a great video and recipe.
