Hey Joe. I’ve been watching several videos of beef cheeks & while they’re similar, I went w yours as my guide. Have got to admit, I’ve never had anything turn out as good as I’d imagined it would be ... until now. Followed your strong advice to NOT trim off too much fat; even the silver skin. And, resist the temptation to take them off too soon. Smoked them for 5 hours at 200f; at 2 hrs & every hour thereafter spritzed them w 1/2 apple juice, 1/4 apple cider vinegar & 1/4 maple syrup. After 5 hrs put them in an aluminum pan w a quart of beef broth, sliced onions & 3 bay leaves for 4 hours at 275f. Then because guests weren’t coming for 1.5 hrs, reduced heat back to 200f. “Shredded” them by hand but they were the consistency of mashed potatoes, so took no effort at all. Got rave reviews, saying I’d “knocked it out of the park”. Great video, great advice, thanks much!

Awesome video! I've tried to explain this to people, but now I can point them to your vid. That is one of my favorite ways to turn tough cuts into tender taco magic. It's time, look, and feel. This method works great for whole venison shoulders too. The onion heat shield is a great idea. Thanks!

@@zammo25 I spritz mainly to add moisture to the surface which will cause the foos to have a good smokey flavor. Smoke will stick to a wet surface. It will add a little moisture too. Try injecting your meats. 👍

Here you go. Here you go. INGREDIENTS 8 chile arbol 4 chile pasilla 3 cloves garlic 1/2 of an onion 1 tomato Salt & Pepper to taste. Boil the garlic and tomato until tender. Roast the chiles in a little oil oil then toss them the same boiling water. Boil until tender and blend together. Salt and pepper to taste. Add a little oregano for extra flavor.👍🏼

Try a Mexican meat market. Usually 1 pound of uncooked cheeks per person works.

Great video Joe! I tried once smokin some beef cheeks but I got some mangled up cheeks and they just burnt up on me. It was a couple pieces but I said once I find a spot to get some whole cheeks I would try it again! Surprising to me wal-mart had some the other day.

You may be on to something with that longer cook for the cheeks. Most seem to go 2 hrs unwrapped then 2 wrapped. Wii try the long cook. Also, I’m digging Miguel’s Prince shirt.

What does it take to get into your family Joe???? That was a great video, explaining the process to a tee. That turned out great and I could smell the red sauce thru the screen. I have been to 2 1/2 barbacoa's here where I live. We have the largest Hispanic population in KY. I have became good friends with lots of the people. 1st a lot of the elder folks didn't believe I would eat any of it (no eyeball's or brains), 2nd I asked to help, 3rd Beef Cheeks. 2nd was the best... LOL All where good. I believe I have finally got a place where I can buy small pounds of cheek's so I can do a small cook. Loved the video...

Hello Jeff! So after all the cheeks were trimmed, I probably had 60lbs. Once the cheeks were smoked and rendered, I probably had 50 pounds. About 1/4 to 1/2 pound per person. I had 40 family members over last night and we only ate 2 of the 4 trays. Lots of family took some home too. Thanks for watching.
