Thank you so much for this!! Years ago (~2004) I worked for a company that has a factory in Piedras Negras right across the border from Eagle Pass, TX. My fellow Mexican maintenance worker counterparts not only introduced me to Tecate Light, but also took me to a taco stand for Barbacoa tacos. OMG, best damn tacos on earth!! They “warned” me that the meat was typically taken from the cows head but explained how tender and flavorful it is after cooking underground in a bed of coals. Some of the older USA women with us would not try it....their loss!! I can’t wait to try this in the spring.

He made brisket but you tried mexican barbacoa! If you have a pressure cooker or a slow cooker. Buy beef cheek! That is what barbacoa is made of! Brisket is another cut! Buy beef cheek! In a pressure instant cooker put like 5 bay leaves add salt decent amount and 5 cloves of garlic to a head and a half onion! . Pressure cook it for 1.15 hrs or in a slow cooker leave it overnight! Until the perfect barbacoa tenderness appears! If you want more flavor you can add cumin and black pepper! Usually in mexico they only use the first ingredients i told you to let the meat be the star! Cheers!

I just made this just as Joe did, and it was Fantastic! Use two 18lb briskets to serve 70 at a party (tons of other food too). Everyone loved the tacos. Thanks, Joe, that was the easiest brisket cook ever.

Ummm...I think making something like this for any gathering would be a mistake. It would always be considered an open invitation for them to stop by unannounced to see what’s cooking 😂. That brisket beef looked so juicy and flavor packed. The texture & crunchiness of the corn taco with cilantro, raw onions & the final touch of 2 salsas is just mouth watering. I’m stealing this one. Late response. I’ve made this with brisket, beef cheek and pork butt. Doing a Childrens’ charity cook off in Midland next weekend and will do it with 6 pork butts. Any tips on the taco shells since I won’t have time to feed 200 tacos on the griddle? My thought is to use the 3 inch white corn tortillas from H-E-B and use several water pans in the smoker and heat them on the smoker for 5-10 minutes at 200 away from the heat. Also going to do a a habenero/Arbol salsa - would love your recipe on that. (Currently I smoke garlic, carrots, onion, tomatillos, habaneros, dried arbol, Morton’s smokes salt and olive oil) keep crushing it bro! I watch all your videos.
