Done this about 25 yrs ago, my first go at smoking food, was excellent, this looks more flavorful than the one i did. Got my eyes peeled here watching and learning 👌

Oh wow, this is such a gorgeous and amazing recipe. I remember when I was 11 or so, being invited to lunch at the house of a close friend and colleague of my father's in a London suburb. His wife made the most exquisite food, so aesthetic and subtle. Tea eggs and chicken I remember eating, beautiful to look at and delicious. I almost thought I had imagined it. Thanks for this! Oh, my... I never realized that a wok could be used to smoke like this... I'm gonna have to try this method for smoking with this recipe and others. Fascinating technique, which means it's an automatic add to my recipe list! Can't wait to try it!

Did a similar smoke recipe of James Maetin with tea rice sugar etc. Made a tinfoil tray and smoker and put it on the BBQ - it was really good, but this looks nicer with the rub and steamer stage. Will definitely try this!
