I love baba ganoush but my wife has an eggplant allergy so I do not get to indulge as often as I like. This recipe is a godsend. It’s rich and creamy and has that great roasted flavor that satisfies all of the flavors I miss. Definitely keeping this one close at hand.

This looks great, and is a fave way to use up zucchini! FYI, this dish has a name: Mutabal Kousa, though it sometimes also includes yogurt along with tahini.
