Steven, I'll second that thought. I know your mom has passed...but I love watching her videos. She is such a humble, gentle soul...and her soothing voice lands on me like an evening rain. Thank you for keeping the videos up.

By the way, when I was growing up here in Seneca, SC , we always had our main meal - dinner - at noon each day when my daddy came home for his dinner hour. Then we ate either leftovers or sometimes something like cornbread and milk at our evening meal - supper. The dinner was always the heavier meal. Now lunch has taken its place and people tend to eat heavy meals in the evening. Call me crazy, but I think that is one thing that is contributing to so many of us being overweight. This all goes back to women being in the work place and not home to prepare a mid-day meal. I’m not a feminist nor do I have any other agenda. So don’t be offended - I’m just musing and writing my thoughts. I raised 6 children and am a nurse, but I was blessed to be able to be at home when my children were small, and I can tell you that being a stay at home mother is the hardest job you could ever have. But, I wouldn’t take anything for those rigorous, but precious years. I have yet to attend a dying patient who says “oh, if only I’d worked more”. The regrets are usually not having spent more time with their families. I know I got off on a tangent here, but it’s 3am, I can’t sleep, and lots of thoughts are running through my head. No one will probably ever read this anyway. We all take ourselves too seriously. Well, I’ll move on now to Miss Phyllis’s next video, and maybe soon sleep will come.

Amen I agree with every word. I was lucky and worked from home and would not trade those years for anything. 2 wonderful grown kids and 5 grandkids later life is good for us all. God Bless.

My husband bought pork chops on sale. I was looking for recipes and so glad I came across this. I miss Phyllis. Steve is doing a marvelous job of keeping this channel current and relevant while letting us continue to enjoy Phyllis ❤️🎀❤️

Oh my! This must've been an earlier meal prep, as Phyllis didn't "plate" her meal LOL... I do so enjoy watching and listening to her soothing voice! She's great at sharing how she purchases in bulk from the farmer's market. Her tips on how to preserve food are very helpful also. I am making the pork chops and green beans with rice and some cinnamon raisin biscuits for dessert. I am going to try. I am on chemo and am disabled. These simple recipes and videos help me figure out how to prepare meals like I used to when I was stronger. It's a bit of my old self back. It makes me feel like I am taking care of my family. Thank you.

I understand how through she was with all of her notebooks. I would like to read all of her notes that she kept. My mother was the same way. I am thankful that she was like that too. I was always taught to drain the green water off of can green beans and add fresh water. I always add butter and onion, bacon or ham to mine, green beans are also good fried in a skillet with onion, bacon, and butter. green beans good but you need to add seasoning I use bacon or ham. Her pork chops and gravy looks good and the okra looks tasty..

@@jss302 not only the sodium. Look at the ingredients there's chemicals in there too keep the canned item 'fresh'. I'm very weary of eating these chemicals. I always rinse anything in a can (well, of course, if you are able to).

My dear Mom used to cook okra right out of of the garden, dredged in corn meal, flour, and spices. So good. Love watching you cook and hearing your stories of the south.

Hello Miss Phyllis, Once again this was a very informative video. Thank you ! When I trim up meat like you did the pork chops today, I always save all of those trimmings and put them in a bag and freeze them until I have enough and then I make a nice stock out of them, along with some carrots, celery and onions. I even use the fat because there is flavor in the fat. Then I refrigerate the stock and when it's cold I skim the fat off and I have a very flavorful stock. I even mix different types of meat. We were quite poor when I was growing up and we had to make due and it has stuck with me all these years. I am almost 81. Thank you again I really do enjoy your video's. I so enjoy when you go up to mountain rest. Thank you for sharing so much of your life with us!!

It's Christmas 2019 and I just found this video. Rose, I was thinking the same thing about making a broth from the scraps only for her dogs. I find it ironic that you used everything to "make do" and today it's called "sustainable living" to make best use of our earthly resources.

These videos are treasures. Phyllis was such a great teacher, I am an old timer, but have learned so many things from her. It is great to go back, and watch these videos again. I am glad she was so open in sharing her health issues. It was great encouragement for others who are going through similar experiences. So sweet and thoughtful of her.

I always felt like Phyllis was my best friend. I loved everything about her and many lessons learned in the kitchen. I still watch her videos so I don’t have to miss her so much! She was extremely easy to follow so kind and down to earth. Never will there be another Phyllis Stokes!! 😢♥️😍

I’m so sorry to hear this. I had just ran across her on here last evening and watched her cook and listened to her and Mr Buckys talk about their relationship. I fell in love with both of them immediately. Two very sweet people .i wish to continue watching her videos bc she is a great inspiration to me right now. This is 2020 and I just discovered Miss Phyllis. One note from 2012 said she has passed. I am so sorry about that. Thank you whoever is posting her videos. I am a southerner also but Southern California. So she has introduced me to real Southern cooking. I have never heard of okra before and certainly never tried it. Her videos are so instructive I have a whole stack of them to watch and foods to try. At 73 I am thrilled to learn how to cook southern style. Thank you for keeping this lovely lady alive and posting her easy-to-follow instructions! ..

Hi Phyllis, thank you for the tutorial on your meal...it looks wonderful...However, I would have loved to have seen everything on a plate for presentation...But I'm sure it looked good and tasted great too...thanks again Phyllis...you are certainly a great cook!!

Oil in green beans is new to me. My mom and grandma always used good old bacon grease and sugar in theirs. Tastes just like homegrown beans cooked right out of the garden. Gonna try those smothered pork chops tonight! Yummy!

You eat the big meal in the middle of the day the same that they do over here in Norway. It's been like that ever since me and my kids moved over here. Evening food is small a sandwich, maybe some soup or even a bowl of cereal. I think it's much healthier. I think many of the countries in Europe have their big meal early.

This looks like the meals we used to have on weekends when my in-laws were living and kids were home still.. Mom would fix what she called Spanish pork chops, I don’t know why, but she browned them like you do and after taking up the chops she’d put sliced onions and bell peppers in the oil until tender and the add flour and brown that .. she’d add her water and after it all thickened she’d add drained diced tomatoes canned or sometimes fresh chopped up and put the chops back in and simmer..she served it with either rice or mashed potatoes.. we have had it over biscuits too..it was really good..

I am watching one right after the other tonight. Here in bed fighting Covid-19 so I just let all the ads play through so that it adds more to the christian school's needs. I just finished an episode of "In the Kitchen w/Gina" ; she's got a bubbly personality- still I feel the need for Southern cooking (I have Southern roots but my family left everything behind (even the accent) when they moved to the East Coast! This is why I am so glad to see Phyllis telling her food prep/market stories in this early days video! I only discovered her rather recently in 2016 or 2017; I feel like she's modeling the best of Southern food- the everyday meal! So thankful for her son's vision to keep these healthy meals (and wisdom) in the public eye!

Miss Phyllis, I’ve been binge watching your videos today because my Husband has been busy trying to fix our Amazon FireStick. Anyway, I just Love You. You crack me up! I like how you talk to us about green beans.. “a green bean is a green bean”. I enjoy watching you cook although several of your recipes I cannot eat because of the sugar. Oh how I wish I had met Phyllis when she was alive! RIP dear soul. I was looking for a lime jello recipe when I discovered her website. I have since spent hours watching her cooking and love for it and life. Her relationship with Mr. Bucky and family have really touched my heart. I bless her family as I know you must really miss her and her husband. I think it is wonderful how you have her website going and paying tribute to her.

I just watched your video. This was done about 6 1/2 YEARS ago. You sure can teach an old dog new tricks! I really love the way you make a delicious 4 - 6 item meal with virtually no mess! My mom was a good cook WHEN she would cook but she always had me to clean up. She was such a messy cook and you are virtually MESS FREE when you cook! Thank you!🌞

Her voice was always so caulming to me as she would cook and talk seeming so relaxed.. when I am stressed I love watching her videos..and always will..Now she is cooking 🍳 in a bigger kitchen ..Rest in peace , you are loved.

Hi Phyllis, Oh boy,I wish I could jump through the screen,I drooled all over my blouse.The okra especially,I was raised on okra and living here in Ca. I do the frozen, Walmart has it pre breaded too and it is so good.I miss making pickled okra with my grand ma.I tried growing it here,but no luck.Thank you for giving me so many ideas and recipes,you are a doll and I adore you and Mr. Buckey.

Great job on that meal, Phyllis. I'd love to have it for our dinner tonight. One thing that surprised me a little is that you didn't drain the liquid off the canned green beans. I learned that from my mother. I rinse my green beans and add fresh water to them. I've never used self-rising flour for my gravy either. See, even though I'm undoubtedly older than you, I'm learning from your way of cooking. Thanks for being so detailed. It really helps.

I just fried pork chops yesterday for our dinner. They were so good but I've got to give this recipe a try next time. I really enjoy your videos so much. I had just discovered your momma's videos and had just subscribed to her channel. I think its wonderful that you kept her channel going. Like I said in another comment, YOU ARE SUCH A GOOD SON AND ARE DOING HER PROUD! She would be so proud of you.

Hi Phyllis I sometimes like to cook canned green beans and red potatoes with a teaspoon of bacon grease. Just boil together until potatoes are done. Delicious 😋

V Rdsnper myGrandma made fresh green beans with bacon and potatoes and cooked till falling apart and added a small amount of smoke flavoring and she canned them! I think sometimes she added onions and brown eyed peas! Blessing👍
