I always make snickerdoodles for Christmas. They’re fast and easy, and they have a lovely buttery cinnamon flavor and a crisp fluffy texture. I used the recipe from The Joy of Cooking, but I cut it in half:
Makes 18-20 cookies.
½ cup (1 stick) unsalted butter, softened
¾ cup white sugar
1 large egg
1 3/8 cups flour
1 tsp cream of tartar + ½ tsp baking soda (or just use 1 ½ tsp baking powder)
1/8 tsp salt
2 TBS sugar + 2 tsp cinnamon mixed together in a small bowl
1. Preheat oven to 350 F. Have a cookie sheet ready lined with either a silpat or parchment (or grease the pan lightly with butter or cooking spray.)
2. In a large bowl, beat the butter and sugar together until smooth. Add about a half tablespoon of the flour to the butter and stir to combine.
3. Add the egg and beat it with the sugar for a minute or two until light and fluffy.
4. Dump the flour, cream of tartar and baking soda, and salt on top of the wet ingredients in that order. Mix the dry ingredients together briefly on top of the wet ingredients, then stir everything together until the dough is dough (mostly one solid piece.)
5. Use a small ice cream scoop to roll the dough into 1 ¼ inch balls. Roll each ball into the cinnamon-sugar, coating completely before placing the balls 2-3 inches apart on the cookie sheet. Do not flatten the balls!
6. Bake cookies one sheet at a time for 12-14 minutes or until slightly soft in the middle and slightly browned around the edges (which is hard to see because of the cinnamon, so go off the texture.) Rotate the pan at the 6-minute mark for best results.
7. Let cookies sit on the hot pan for a minute or two after they come out of the oven. Cookies should firm up enough that you can transfer them easily by hand onto a wire rack. Serve immediately for best results. (Store leftover cookies in a sealed container. They will still be quite tasty, but not as crisp.)

Also...these are not Xmas cookies. Very common amongst we Scandinavians. Was frequently in our home as Mom didn't need extra Ingredients as chips, nuts etc.

I eat raw cookie dough too :) and I haven't died yet. This was perfect timing - I was planning to make sugar cookies today, but I'm going to do these instead!
