Historically speaking, the sea salt technology was secretly introduced from China to Siam in the reign of King Boromtrai Lokkanart at Petchburi in the south. Until then, we had depended on rock salt from Nan and Nakornthai. These two ancient towns are on the Luang Prabang Mountain Range. I visited Nan around 15 years ago. It felt very foreign, no faring, except for 1 Welsh ex monk who ran a restaurant with his Thai wife. He is now sadly passed. There are some famous motorcycle roads in the area which took me there. Good times

Nam Ngoew isnt technically from Burmese but it originally is Tai Yai people’s food who were persuaded to the Chaing Mai city (Lanna) in Kawila Governor in the reign of King Rama I ( Collecting people into the city who were herded out of the city by Burmese; Kep Pbak Sai Sa Kep Kha Sai Mueng’ s era). Lanna People call Tai Yai as Ngoew as well as Nam Ngoew is put Ngiew’s flowers ( cotton’s flower) into it. Lanna people is consist of Tai Lue, Tai Yai, Tai Kuen, Tai Yong, etc. Tai Yai people call Nam Ngoew is Khao Sen Mak Khue Som; noodle starch in tomato soup. I’m myself Tai Yai descent. We are Tai or Thai not Burmese. FYI P.S Shan in Burmese literally means Tai 10:49

My friends and I went to Chiang Mai in January this year and on our way back we drove to Prae, Nan, and Sukhothai along the way back to Bangkok. We stayed at Nan for 2 nights but didn’t make it to Bor Kluea due to not enough time. Thanks for taking us there. We would definitely go there. Anyway, we did enjoy the night market at Nan and had a wonderful dinner there.
