Ah ha! So that's what my mom's "Almond Cookies" were. Her parents were from Tinos, but she grew up above their candy shop after they immigrated to lovely Newark, New Jersey and was never allowed to learn or speak Greek back in the day. So, it's just ground toasted almonds baked into butter, "icing sugar" (you are like SO Canadian, lol -- we call it "powdered" in California) and what she called "good" (cake) flour, with orange zest. She would press a candied whole almond on each one before covering it with powdered/icing/confectioner's sugar, so that's why my siblings and I called them almond cookies without knowing that they're baked with actual ground almonds. I'd been trying to reproduce them by making sugar cookies with almond extract and that damned whole almond to no avail. Mom passed >20 years ago and I've since taken to the kitchen, trying to deconstruct some of her mysterious Greek dishes that she learned from her parents. By the time I was born, they had moved to suburban Northern California, where we had every fruit and nut tree you can imagine right in our back yard in the 1960's. Whereas us kids wanted only Oreo cookies and McDonald's hamburgers like our friends had, we were served what was local and fresh (= cheap = resourceful = Greek!). I now know that lemon was in everything, and delicious chicken dishes always had figs. Who knew? Still can't recreate Yiaya's rice pudding or her cake made with wine. BTW, after watching your show on Moussaka, I realized why my working mother never made it but always ordered it whenever we went to a Greek restaurant, hehehe. Might give it a try... when I am retired. Thanks so much for sharing your work. Kala Christougenna!
