Good simple hot soba noodle soup. I never had eggplant in soup, now I'm hooked. Cut eggplant in chunky round steaks and pan fry both sides. Freeze left over. Great thanks Miwa!

@@MiwasJapaneseCooking you’re English is 95% fluent. There are minor grammar errors, but no more than expected. English is an annoying language. Language proficiency is dictated by the same principle as anything else. Knowledge is key. The more you know the better you are at it. Most adults here in America use basic words learned in primary school because they simply don’t have a desire to learn any further. You are way ahead of them!

you could use sugar, but please add just a little bit. Sugar is a lot sweeter than mirin. please make sure to add more water if it's too savory or sweet.

So I don't know if you can help me with this. But there are these Nissin instant Soba noodles that you can buy in the store and I absolutely adore that really thick, pitch black sauce they come with. However, I have no idea what the ingredients of that sauce are and how I can recreate it at home for my noodles. Do you happen to have any idea what recipe that sauce is based on or what the ingredients could be? (minus the additives ofc)

popular one is grated daikon radish, fried tofu seasoned with sweet soysauce. we call that one KITSUNE SOBA! If you are not vegan, onsen egg is good option too!

awwww you are so sweet!!! That's why I can't stop making videos!!! haha Fried tofu seasoned with sweet soysauce is one of the popular toppings in Japan. we call it kitsune soba in Japanese. Other one is grated daikon radish is very refreshing too!

Thank you very much for asking Hikari! This kaeshi is a little bit different from sukiyaki base. Sukiyaki base is a lot sweeter. If you add extra sugar starting with 1/2 tsp, you will adjust the taste to you liking!

Perhaps this soup is something for my husband since he doesn't eat fish. With all the katsuo dashi based soups, cooking can sometimes be a challenge. Although probably only use the kombu since shiitake is also an issue here :( So hard to cook Japanese this way; I always have to adjust meals for him. I often use just chopped negi as a topping, and perhaps thinly sliced egg or kakiage.

that's a great idea to add variety of toppings if you don't use katsuo dashi! you can probably use kombu dashi powder ?? I would love to know your twist and creativity for your husband!!

@@MiwasJapaneseCooking No usually I soak dried kombu in water because I have to buy the kombu dashi powder in Japan. If I can I smuggle in regular dashi but with soup that has too strong a taste and smell. sometimes I add a bit of vegetable bouillon powder or just a pinch of salt to the kombu water. He loves everything fried so he is a big fan of kakiage but also eats like spinach ohitashi or things like that on it.

I'm sorry, I could not understand you when you mentioned what the sugar should not have. Would you please tell me what it was? Speaking of sugar, I am amazed as to how often sugar is used in Japanese recipes. Is this because these recipes are using a sugar other than the white sugar I am using here in the U.S.? Perhaps these recipes use a healthier sugar assuming that exists?
