I'm trying to switch from American breakfast to more japanese or korean style for the sake of my health so I'm so grateful for your videos! I heard you say that you eat fermented foods, I would really like to hear you talk more about that in a future video if you are able! I'm trying to eat more fermented foods but I don't know where to start

thank you very much for your comment!! I'm glad that you enjoyed my videos! fermented foods is on my list! I wasn't sure how many of you guys would be interested! I go through a lot of those, so It might be too narrowed down. haha If you want to try more fermented stuff, miso, soy sauce, mirin, and sake like all of basic Japanese condiments are actually fermented. @@MiwasJapaneseCooking There's definitely a lot of people who either eat fermented foods/make their own fermented foods now, and/or are interested in learning more about how people eat them as part of their healthy diet. I'm one of those people as well. :)

I wish I discovered this channel earlier! I really appreciate the way you present the material and the fact that you have vegan options. I do not know if you are a fan of natto, but could you do a video on it? I live in the US and the only natto I've had was from a frozen package. I liked the flavor but did not like the gritty texture (which I hear is due to the freezing process). Thank you!

Very explanatory. I started avoiding sugar in my diet an Japanese cuisine with that umami flavor has eliminated my cravings gor sugar and I have lost 11 pounds in a month. Marvelous! Thank you for taking the time and explaining us.

All Japanese people I know put "the holy trinity" soy sauce+sake+sugar in most of their cooking. And they love animal fat 😂 (豚バラ、唐揚げ、豚汁など) But they don't eat a lot of desserts or drink sweet drinks.

Your videos are so wonderfully educational. Your concentration on health is why you’re now my go to for all food that’s healthy! I’m trying to go from a traditional American diet that’s full of fat to a more far Eastern diet that’s not. Japanese diet is the most attractive to me. The food and traditions are wholly for good health. Fantastic! Your videos motivate me every morning to continue on my quest for better health. Thank you so much!

I’m doing well with my quest for health and have introduced my family to your recipes with a great response for more. You are so busy with your beautiful family and your channel so I must tell you how much I respect your taking time to message me. I’m hoping to continue messaging as a dream of mine is to see Japan and continue learning about Japanese foods. Seeing Japan probably won’t happen with the pandemic and the cost would be great but I will continue bringing Japan into my home for myself and my family. When I cook Japanese recipes I find there is sugar in almost every dish so I would disagree with the low sugar comment. But I do agree there is low animal fat I think this may be the main reason why it's healthier.

Thank you very much for your kind comment! I'm pretty surprised to receive this compliment since I use to have a serious eczema when I was little. My skin is pretty dry so I apply night cream after I used moisturizer. Also I sleep a lot with kids! haha

Since I started having more of a Japanese style diet I've lost a lot of weight. I don't crave sugars anymore. So I also switched over to green tea and morning walks, as the weather permits.

Hello there, I just started making japanese omelette and it's been fun-tastic and really yummy. I also tried making veggie's sushi and that's pretty good ...kinda master it for second try. Already making miso soup with variety of vegetables ( broccoli, cauliflower, spinach, butternut squash) and guess what? It's really good that being said its HEALTHY and easy to make.

In all of the Japanese cooking channels that watch, I don't see any nuts or seeds (other than sesame seeds) used in your dishes? But in American cooking, they are promoted as a healthy choice. Why do I not see them used in Japanese cooking as much?

I never realized that!! I don't know why but I'm just not used to cook with nuts and seeds also the herbs although I would love to!!!!!! they are also very expensive to buy here in Japan too.

For fermented products I drink Kombucha every day. I make my own stock like you do. I studied the way Japanese Chiefs make stock for ramen recipes and use those methods for my dishes. I have to substitute some ingredients that can't be found here in the US that's used in Japan. Stay clear of food that's high in fat, sugar, and most dairy products. I hardly ever have to go to a doctor myself other than the occasional allergy Dr for some medication I use during allergy season. I like the recipes you cook and use them often. Have to substitute ingredients sometimes but that's fine with me. Thanks for sharing with us what you cook on a daily basis!

Stock will become too sticky if boiling kombo for too long, can I use lesser kombo instead?

dried mushroom has a lot more flavor than the fresh ones. So sadly, you want get the same taste. 😭🙏

Bonito flakes are low sodium. Dashi powder is a little higher, but if you buy a bottle instead of the packets you can control the amount of sodium by not using a full serving. Kombu also has sodium but if you use a smaller piece and augment your dashi with mushrooms, you can reduce the sodium.

Can u make some recommendations which variety is good. Not living in Japan, not sure which one to buy. Also, does the bag, in which the dashi is packed, OK to cook for a while? What is it made of?

Yeah my worry about dashu granules are thhe additives, though it's hard for me to determine one because some claims they don't. Doing dashi from scratch is a little pain for me, especially in ky country because Kombu and especially Katsuboshi are pretty expensive so I only use them on weekends lol.

Something I try to do is to drink water throughout the day and have it with dinner, instead of juice or soda like many American households do. Love your dishes, they look amazing! I love miso soup too!

I tried to make miso soup a few times (I used a original Japanese dashi instant) … I wanted to like it so bad but the taste was so fishy and strong for my liking. 😭💔

try a instant vegan Japanese dashi which is made without fish such as SHIMAYA Kombu Dashi Powder - if you are unable to find in a local Asian market near you, Amazon carries several vegan dashi choices -

The three problems I have with making Japanese food (especially in the morning) are: 1) Really expensive in other countries 2) Hard to get if you're not living in a city, and online + send costs are basically point 1 3) Too much to make and takes too much time. I wake up at 5.30 A.M. and start at 7 A.M. (but I like to be early, so I depart from home around 6.20 A.M. so I can start 15-20 mins earlier). And preparing so many side dishes (which are expensive to buy) is really not my thing. Ohh and mayby number 4, I'm vegetarian and I don't feel like changing the fish with tofu and eggs every single day lol. Mayby you've got any tips for cheap stuff (the dashi is no problem as I have kombu and dried shiitakes (which is as far as I go with ordering online expensive stuff and only buy them when I need chinese stuff for wokking lol)) and a simple yet fast option consisting of: rice, vegetarian miso soup, a few simple alternatives for the grilled fish and a simple and cheap side I can add with it to balance everything out?

If you live in Chennai there is a Japanese restaurant in an apartment building at ground level in Aydar that also has Japanese groceries. I found out by asking Japanese embassy. That was in 2009 so not sure if it is still there.
