Recipe for: Sofianki with Cheese Like Once Upon a Time. Step by Step!
Required products:
For the dough:
800 g. flour, pre-sifted
300 ml. warm fresh milk
100 g. yogurt
1 egg + 1 egg white
50 ml oil
1 tablespoon sugar
1 tablespoon vinegar
1 teaspoon salt
7 g. dry yeast
For the filling:
250 g. crumbled cheese
50 g. melted butter
For spreading:
1 egg yolk
1 tablespoon fresh milk
For sprinkling:
Breadcrumbs
Preparation method:
Prepare the dough:
Add the sugar and dry yeast to the fresh milk. Stir until the sugar dissolves and wait 10 minutes for the yeast to activate.
Add the salt to the flour and mix well. Make a well in the middle of the flour.
Pour the activated yeast, vinegar, yogurt, egg plus egg white and oil into the well. Start kneading until you get a smooth, soft dough.
Shape the dough into a ball. Grease a large bowl with a little oil and place the dough in the bowl. Grease the dough on top with a little oil as well. Cover the bowl with a lid and let the dough rise in a warm place for 1 hour.
Shape the sofijanki:
After 1 hour, lightly knead the dough and remove it to the counter. Divide the dough into 9 equal parts and shape into 9 balls.
Take one ball, divide it into 2 equal parts and shape into 2 smaller balls. Roll out both balls and grease one sheet with butter, sprinkle with cheese and place the second sheet on top. Roll out lightly with a rolling pin, grease again with butter and sprinkle with cheese. Roll into a tight roll, pinch the edges to close, and roll lightly with your hands, pulling apart to make a large wick. Shape by folding one end inwards and then the other end inwards again to make a long snail.
Arrange on a baking tray lined with baking paper. Repeat the same process with the remaining dough balls.
Rising and baking:
Cover the tray with a towel and let the sofijanki rise for another 30 minutes.
Add the fresh milk to the yolk and beat with a fork. Carefully brush the risen sofyanki with the beaten egg yolk and sprinkle with breadcrumbs.
Bake in a preheated oven at 180 degrees, without fan, in the lower part of the oven, for about 25 minutes.
