It's mostly only known to those that live on the water, I had family that ate them on occasion, you see how many he had, that's a bunch, they are hard to find since it's something you have to watch daily and they don't do it all at once

I live up north in Brooklyn, NY but I love Cajun cooking - and I love crawfish. I just ordered 48 soft shell crawfish, a bunch of crawfish tails and a large size of your Two Step! I can’t wait to try fried soft shell crawfish - with a side of crawfish tail mashed potatoes!

There are also soft-shell lobsters in New England most folks don't know about. You don't want to eat the shell but it makes them a whole lot easier to eat - just peel the shell right off, no cracking involved. The lobstermen throw most ofthem back because diners want hard-shell lobsters.
