I also visited Japan during cherry blossom season, and I know that we were at Meguro river on the exact same night because of the weather timeline - I feel blessed to be able to watch someone else's account of a night that was so special to me, and it's possible by chance that we may have walked past each other. spring is such a beautiful season especially in Japan, so thank for recording your life for us to watch and relive!

I loved this video. All the blooming sakura were glorious. ... But, I'm commenting because I too have trouble with pancakes. I think part of it might be your gas stove and the pan you are using. The flame will target the pan unevenly. I usually turn the heat up a bit to pre-heat the pan. Then I turn the heat down to the recommended temperature (just under medium), and add the batter. You seem to be using a different brand than I am as well. I find my pancakes turn out better if I keep the batter slightly chilly. It doesn't seem to run as much when I pour it into the pan. Generally, the idea is that you watch the tiny air bubbles escaping and the edges of the pancake. The edges 'set' or firm up when the pancake is ready to flip over. However, if you pancakes are coming out uneven, then waiting until the edges set might cause the pancake to burn. I agree with you; as long as they taste good, I always feel good about my results.
