Mina Yamashita, owner of the "RAKUDA" bakery, makes about 10 kinds of bread by herself starting at 2: 30 and closing at 18: 00.
At "RAKUDA," all bread is made with home-cultivated leaven, without industrial yeast.
In this video, I closely followed Mr. Yamashita's entire baking process over the course of two days, from preparation the day before, to early morning production, to the opening of the bakery.
In addition to baking, I also heard many stories about Yamashita's personality, such as why she decided to open such a store and her family

This baker works an average of 16 hours a day, which is truly impressive. I can't imagine how she finds the willpower to keep going. She started with limited resources and developed her skills through hard work. As a mother of two, her responsibilities extend beyond her bakery to caring for her children. Meanwhile, I find myself complaining about the effort it takes to sell different types of bread, including kneading, shaping, and washing dishes. The physical strain of standing, bending, and dealing with sleep deprivation is tough. I hope her body is holding up well. I admire her dedication and am also inspired by other Japanese bakers and their breads. This film was definitely worth watching.

Impresionada no solo por tus excelente tomas, sino por la forma en la que lograste capturar la esencia y el porque ella hace lo que hace. Esos pequeños momentos en los que sonreía y con tanto esmero boleaba la masa para el pan fueron destellos hermosos para mi ojos y mi alma panadera. Espero que consiga descansar un poco la sra. La masa madre con pasas es muy buena para hornear en casa, porque no tienes que estar pendiente de la masa madre todo el tiempo.
