Wonderful tutorial! Mary, I left a question on your white, smooth American buttercream tutorial ... what size mixer bowl on your KA mixer do you have in that video? Important to know so because the amount of the buttercream recipe you are using needs to be enough to cover the beater to make it smooth as you mentioned ....

@@sophisticakesbymary thanks... I have a 7 quart KA but I also have a 5 quart bowl that fits it, but I think the 7 quart bowl may work for this recipe! Excited to try, I always used cream in my American buttercream but I will try the water, and this cake design is just fabulous. Glad I found your channel!

Can you decorate this cake the night before the event and it will held well? The rice paper won’t get soggy and moist from the buttercream ?

It should be fine, but if you are worried, coat the backs with melted cocoa butter first before attaching.

Cream frosting wont be able to hold the chocolate upright. It's not as firm as buttercream frosting.
