@grabble7605 when food is frozen, it's much more difficult for us to taste. Furthermore, when we add cream, the flavor is drowned out that much more. If you've ever watched gourmet ice cream making, they have to make their ice cream base flavor 10x more intense bc of what freezing and dairy do to muddle the flavors.

I love how confused they are when they start out - the tapping to find the ice cream, asking if they're working together or competing, the excitement on their face when they realize they're gonna get to taste 6 ice creams - adorable. Ben and Mike really went on a journey here didn't they - Mike looking traumatized when Ben brought up the duck choc ice cream; Mike getting excited while talking about crumpets; Ben's disappointment with the pea ice cream; Mike laughing at the thought of some one bringing an ice cream scoop back to the office; Ben constantly being so methodical every time he's tapping to look for the bowl; Mike being excited when he realized what the flavour was; Mike being ecstatic about his guess being right; talk about an emotional roller-coaster. This looks like one of those videos where everyone bts would've been cracking up cuz the guys are blindfolded and have no idea what's coming next!

I bought a new ice-cream machine at the beginning of the year & have been experimenting. My biggest success was turning Ottolenghi's beetroot za'atar with goats-cheese & hazelnuts dip into an ice-cream. It's great with a salad & pea-shoots on a hot summers day. You should try carrot & caraway seed too. Cooling, earth & sweet. Pea ice-cream is also nice with a salad. Brown-bread ice-cream has long been a favourite of mine, especially with a tart raspberry or gooseberry coulis drizzled on top. First time I had it was on a glorious hot day as a now defunct herb farm in the Carse of Gowrie. Going back in time there is a famous ice-cream shop in St. Andrews. I was there with my grandfather as a wee bairn, he said I could have a double scoop! I chose the liquorice for one side & an Italian tangerine sorbet for the other. The colours were fantastic in the bright sunlight & the combination of flavours was utterly fantastic. Look forward to seeing what you come up with.

Idk about the UK, but here in the USA its pretty common practice to dip your fries (chips) in a milkshake (usually vanilla). Gives a wonderful sweet to the salty, the cold and hot and crunchy and smooth playing nicely. I imagine that ketchup ice cream would do very well with that!
@violetskies14
@violetskies14 10 ай бұрын
Some people do do that but only with the American fast food style of fry (we call the little thin ones fries and to us fries are that one specific kind of chip and chips is the word for the category of food, same with biscuits and cookies) not a British chip which are thicker and more similar to what you might call a steak fry. And I do agree it's really nice when it's good fries and a nice vanilla milkshake but I'm still dubious about the ketchup ice cream.

In Canberra there used to be a burger chain called Mookie, that did a peanut butter and miso milk shake. There's also a bakery called The Kraken that does a peanut butter and miso toastie. It's a flavour combination that extremely works and I could definitely see it in an ice cream. Also this video reminds me of the Iron Chef episode where they made a lamb shank dish with a capsicum sorbet. The idea of "savoury ice creams" as a flavour pair in dishes is something that seems like it should be more common, and something ripe for exploring.

In the Southeastern US there's an ice cream combination that a lot of people growing up in rural areas know and love. That's chocolate ice cream with crushed "Cool Ranch" Doritos (or the equivalent store brand) sprinkled on top. Some people like them completely crushed into powder, others like them only partially crushed so that there is more crunch. Don't know how it started or why, but it's a thing, and it's something anybody can try.

Those are really some weird flavors, I may personally give the soy sauce one a try out of curiosity. But that crumpet one looks delicious tbh and would 100% eat that

I have worked in a couple of places that did savoury ice-cream. One of the most popular was a miso caramel and another was wasabi that was suggested to be served with fish

I've had a rice pudding ice cream that I've been looking for ever since. It's not even that out there, but still hard to find.

On savoury ice cream flavours: try to get kuromitsu sauce (in japanese specialty stores) over vanilla bean (island creamery), letting it soften not fresh from the deep freeze = better than salted caramel goodness. They used to sell it as as a flavour of a soft-serve dessert, in the fast-food beef and rice outlets called "PepperLunch" - but not anymore... Better than sucre-grain de sel (de la mer), Super super.

One of the best ice creams I've ever had was goat cheese with honey. Not really a savoury ice cream and a classic combo, but that cheese worked unbelievably well in it.

From what I have come to understand Blue moon is an ice cream flavor with bright blue coloring, available in the Upper Midwest of the United States. Both one of my Faves and unique to Mid west of the US.

I really enjoyed this especially since I love flavouring up boring morning oatmeal - sweet chilli and miso particular faves. By the way, here in Canada a best seller is ketchup flavoured potato chips (crisps)

In America we have a company named Van Leeuwen that does weird flavors. The Pizza one and the Mac and Cheese were amazing. They also do a Earl Grey, that you may like.

Has anyone else noticed (too many comments to read through) that at 13:13 (#5, sweet chili) and 15:15 (#6, pickle) the same shot of the same bowl of ice cream is shown? When the guys are tasting the second bowl (#6) it is doesn't look like the same ice cream as the close up for that flavour. An error in editing maybe? Still, a great episode as always! well done, Mike!

I work in a gelato shop here in Stockholm (stikkinikki) so I apologise beforehand that you won’t be able to get your hands on any of these flavours- but my absolute favourite gelato they do is a sweet corn. It’s just so good! Wasabi, Miso, Messmör (a swedish cheese-y spread), ’frukost’ (breakfast), bacon, beetroot sorbet, beers sorbet, spicy peanut, ölkorv & mustard (like salami), are some of the savoury flavours from the top of my head hahaha
