Ingredients:
Sweet Potato Biscuits:
2 cups plain flour
2.5 tbs granulated sugar
1 tsp kosher salt
2 tsp baking powder
1/2 tsp baking soda
3/4 - 1 lb mashed sweet potato
1 stick frozen butter
1/2 cup half and half
*be sure you wet ingredients are really cold
*fold dough 4-6 times. Do NOT over mix. Dough should be sticky
*you may grate in your butter if you do not have a pastry cutter
*if you don't have a biscuit/cookie cutter, try using a drinking glass!
*bake @ 425 F 13-14 mins
Sweet Potato Butter:
1 stick softened butter
1.5 tbs Honey
1/2 tsp ground cinnamon
2 tbs sweet potato
Fried Fish:
4-6 Cod fish pieces (or favorite fish)
1 cup yellow corn meal
1 tbs kosher salt
1 tbs baking powder
1 tbs garlic powder
1 tbs paprika
1 tsp black pepper
cooking oil for frying
*you may cut this recipe in half
Sausage and Peppers:
1 pkg mild Italian sausage (6 links)
1/2 red bell pepper
1/2 green bell pepper
1/2 med onion
1 tbs bbq sauce (optional)
COLLARD GREENS:

Bunches of fresh collard greens (4.5 lbs)
1 med onion diced (1/2 large onion)
4 cloves garlic
2 lbs smoked turkey (or meat of choice)
1/3 cup bacon drippings( optional)
1 tbs granulated chicken boullion
1 tsp red pepper flakes
3 tbs Apple cider vinegar
1-2 tsp Lawry's Seasoned salt
2 cups water
** Cook meat 30-40 mins on med heat prior to adding greens(depending upon toughness )
** Cook greens 1.5 hours (may need more or less time depending on toughness and your desired tenderness)
**Approx 2 tbs baking soda ( it is used to help clean an tenderize)
*taste and adjust as needed
