Can we save up some electricity and skip preheating part ?
We are going to find out in this video .
This is the first episode of a series of comparison videos about sourdough bread so make sure you subscribe my channel and dont miss next videos .
Ingridients for two breads :
700G flour
525ml Water
140G starter
14G salt

Nice breads. But... 80 minutes for the first one (cold start 40 with lid + 40 without lid). 60 minutes for the second (preheated start 30 with lid + 30 without lid). I preheat my oven during 15-20 minutes. 20 minutes preheat + 60 minutes = 80 minutes. So there's no electricity saved.

Thanks alot I’m curious what kinds of oven are using cause in most cases to make artisan breads you need to preheat somewhere between 45 to 60 min and that’s what it’s a electricity saver recipe ✌️if you got the good result perfect bread with a nice oven spring with the 25 min preheating stick to what you are doing this is for beginner home bakers😃 . And checkout the rest of my videos I experiment meny things I will experiment turning off the oven completely and bake the bread with preheating only and share the result soon 🙏🏼 thanks for watching my channel

Nice video! I can definitely tell the difference, but if you needed to bake on a summer day with minimal heat added to the house doing it from cold seems very reasonable

I always used my stainless steel mini convection AirFryer to bake my sourdough breads. Save a lot of electricity!😊

Hey there! Just found you. This was an interesting video. I've tried these methods and more. I've found they all produce pretty much the same result, with a very hot DO (500F) lowered to baking temp when the dough goes in producing marginally better results. Can't wait to see more of your videos!

Nice video and comparison, though I miss some information on how you actually did it. Put it directly in the cold oven, what temperature did you bake it and did you have to add time to the baking in the cold oven? Was the taste to both the same?

Glad you found my video useful Yes I put it directly in to the cold oven but note that both made with Dutch oven or cast iron iron put with the lid and yes of course it takes little bit longer for example I usually bake 25 to 30 min with steam or the lid and 20 to 25 min without it . But in this case baked 40 to 45 min with the lid and 30 min without lid . Again knowing about your oven helps you a lot in your oven might takes longer or faster to bake the point is we save up that 45 to 1 hours of preheating wich is a big change of saving electricity right ? Checkout the rest of the videos on my channel I have some more experimenting to come soon ✌️and lastly the taste was about the same 🙏🏼 by the way very interesting questions 👍keep baking

When you say 3-4 hours bulk fermentation right after the 2nd coil fold, is that from the time you mixed the dough and added starter or from the 2nd coil fold?

3 hours after lamination during that time I usually give it one coil fold and the dough will be ready for final shape . My bad I think not enough explanation 🙏🏼 but timing really depends on. Your climate I’m living in East Asia here is always hot ✌️ in winter time or colder climate might takes more thanks for watching my channel

Actually Just skip preheating part it means put the bread inside Dutch oven then turn on the oven and bake 40 to 50 min with the lid and 30 min uncovered

do you bake it straight out of the fridge? you don't let it rest after removing it from the fridge?

Exactly should bake straight out of the fridge the point is the dough get a shock inside the oven wich end up with better rise and scoring the dough from fridge is much easier lastly the dough fermented just to perfection more than that it will oveproof

Glad you noticed that actually right hydration for the flour you are choosing to bake with end up with a nice developed dough wich is easier to work with ✌🏻

@@littlemoresalt Well, I have yet to get to a high hydration that I can work with. 75% is barely manageable. Makes me crazy.

@@alanbrunettin5584 if you are using a high protein flour your are good to go something like King Arthur or even a local flour with the more than 13% protein ✌️keep it up you will find it keep baking

@@littlemoresalt Yeah I had been using the KA bread flour(I think they say it’s 12.7% protein). However I’ve recently discovered their High Gluten bread flour. The resulting bread is great but the handling is the same. I’ve also added in Caputo’s Manitoba which I’ve read positive reviews of; even combining those two. I dunno. The breads are all great but I just can’t get past the hard-to-manage stickiness.

230 for 20 min then remove the lid or steam and bake for another 20 min at 210 for my preheated oven And cold oven 250 40 min with lid and 30 min without lid at 220 🙏

Sure preheat 250 degrees for at least 45 min with the Dutch oven inside of you use it if not heat up baking stone or a tray upside down Then bake 20 to 30 min with cover or steam at 230 . Reduce the heat to 210 and bake for 20 more minutes or until it’s dark enough

на самом деле перед выпечкой посыпьте немного муки, это поможет легче надрезать края и выглядеть белым после завершения выпечки ✌️

Cause it’s cold and takes time to get the heat better to put on maximum temp ✌🏻 bake with lid then reduce the heat if it’s get to hot and bake without steam or lid for crust

Doesn't it save energy to preheat the oven? I mean the bread takes longer, but the oven still has to reach its temperature. This happens more slowly when there is already baked goods in the oven than when it is empty. , im not sure

This method works better for someone who wants to bake one single loaf of bread maybe once in a while but for micro bakery or even baking multiple loaves of course it’s not the best solution cause you preheat the oven one time and bake 3 5 loaves one after ech other that’s why I’m with you with your point thanks for commenting i have tried a new experiment actually don’t miss this Saturday video gonna be interesting I guess ✌🏼

For cold oven : 250 for 40 min then 230 another 30 min without lid . For preheated oven: 230 for 30 min then 210 for 20 min

I have tested cold vs. hot oven also, and did not find any difference.

even if the thing uses 5000 watts, it's 5kw/h, probably about 75 cents, to preheat the oven for an hour. Don't lose sleep over this. :)

In a homemade oven 220 to 250 depends on your oven if it gets too hot 220 would be enough but if it’s a smaller oven definitely highest temp wich is 250 usually
