I will try to get a starter video out soon. If you freeze the bread for 24 hours then thaw and eat it might help with glycemic index. you can make all kinds of things with sourdough. I’ll give English muffins a try soon. So happy you are enjoying the bread making journey.

@@pinkgoddess93 many bread recipes don’t call for eggs and some do. You can add eggs if you want but if you do you will need to decrease the liquids by the same volume as the eggs. I would make it without eggs first you may find it’s not necessary. Eggs are an enrichment that can make bread softer but can also affect how it rises.

Hello Dorinda thank you this recipe, I have just received my KBS BM , I'm in the U.K. I purchased this BM b coz of the ceramic bread pan, can I ask a question please? I've been asked the question, is the ceramic coating easily scratched, I chose this machine so as to avoid Teflon coating. I can't name a famous make of bread machine which has a Teflon pan but as the bread comes out of the Pam it has caused scuff marks on the pans which apparently isn't good for our health. So I went for this make b coz of the ceramic pan. I would be so thankful if you could let me know. Thank you and God bless.😃👍🏼👍🏼👍🏼

The sourdough setting on the bread machine is set up to use yeast as well as sourdough and in my recipe I only use the sourdough starter.

Thank you for this video! Just what I was looking for! I make sourdough with the traditional process but have this machine and had no clue how to do this. I have a few sourdough sandwich recipes I was about to try. The milk in yours is what mskes it soft right? Does it have a SD flavor? I may make some tweaks for that but am beyond grateful you taught me how to use my KBS for sourdough. You know the manual is sorely lacking on operations other than the basic! Thank you!!

Hi there, just curious why you don’t use the leaven dough cycle like I do and leave it over night take it out and bake it or bake it in the machine ..thanks

Thanks, I appreciate the question it is a very good one. Using the Leaven cycle is certainly an option. The only difference is ,at least with the KBS machine, that the leaven cycle doesn't do 2 cycles of kneading, it only does one, and then after the 50 minute fermentation it does a very brief 1 minute shape, then ferments for 10 more minutes. The leaven cycle also warms the dough, for some this could create a more tangy sourdough flavor than desired. I find the 2 cycles of kneading really make a difference in the texture and gluten formation of the bread. I find with sourdough the longer rise sessions make a difference as well.

Hello, thanks for the delicious sourdough recipe. I also have a kbs bread machine. I tried this recipe and followed your recipe. It rose fantastic and smelled delicious. The dough rested for the 24 hours in the machine. However when I removed it from the machine after the 45 minutes bake time, I forgot to take it's temperature and it collapsed. I was horrified. Any hints on time or other tricks. It did have a wonderful flavor. Thanks again. I can't wait to try it again. Blessings from Montrose MI

I’ve experimented with doing sourdough in the bread machine. I have a Zojirushi and can be programmed. I also did it manually as you did. My comment is, bread recipes, the dough needs to final proof before baking. You shaped after fermentation and went right to bake. I would shape, let it rest 1 hour (proof), then hit the bake function.

Many years ago I used a sourdough starter, and made many delicious loaves. It eventually went really sour smelling and I tossed it out. Not sure if I am going to try this again. Time will tell. On a different note, your apron is adorable, did you make it?

Room temperature starter is best if you use straight from the fridge it will just take longer to rise. I usually feed my starter before I store it especially if I’m not going to use it real often.

Would this recipe work with different wholegrain flours like wheat, oats, buckwheat, spelled, rye, barley, and with olive oil and honey? How long baking do you recommend for this kind of bread?

When using whole grain or different kinds of grain for bread the amount of liquid is different and a few other slight differences. As for baking time I think the bread machine bakes for 45-50 minutes. If using an oven you will need to take the internal temperature of the bread to be sure it is at least 190 degrees F or 88 degrees C

Thank you for this recipe as well as for tips. Would you be so kind to give volume of cups and spoons and measurements that you use. For example cup for milk is 10 oz or 300 ml, 1 cup US for bread flour is 136g, etc. That would help your audience to have exact measurements for recipe, because ratio could be crucial for successful implementation

Hello, I have this bread machine and plan on giving this is a try. I’m very new at this so sorry if these are basic questions.. just to confirm, I need bread flour for the recipe? Can you use all purpose flour? Also, I don’t want to use milk with mine. Can I substitute that for water instead?

You can use all purpose flour but you might get a more dense bread that doesn’t rise as good. You can substitute the milk for water. All of these changes will affect the end result but still make bread. If using all purpose flour you might want to add one more stirring cycle just to help increase the dough strength.

I would like to use olive oil and honey instead. Would I need to use the same amount of each (1/4 cup) if I decide to use honey and olive oil instead? Or would the amounts I should use be different?

I have baked sourdough in the oven instead of the bread machine. If you want to use the bread machine process in the video but bake it in the oven I would shape the dough and place in oven safe pan for baking before letting it rise overnight, then just bake in the oven.

I have the same bread machine as you. I did make bread on the sourdough setting 3but it did not rise like yours. It came out about half the height as yours. Bread tasted good Is the way you stir and set and then let it sit overnight the way I should do this. This was the fourth sourdough bread I have made I was not happy with them. Please help I do not want to give thank you

I would wait a few more hours. Make sure it’s in a warm place. It’s okay if it doesn’t rise as high it will rise more in the baking usually.

The sourdough cycle on the bread machine is not meant for true sourdough. It is meant for a recipes that use yeast along with sourdough starter. Since I’m making a bread only using sourdough starter, the sourdough cycle would not work for this bread.

I would need a little more information to help you troubleshoot this. When you say look terrible can you describe it? Is it flat? Sunken? Lumpy? Dark? Pale? What is the inside like?

Could also be the yeast quality.. my initial experience with kbs machine was also not great. After experimentation, replacing yeast with new one worked. My earlier yeast was atleast a year old.

To Sue: Are you monitoring your dough about 5 minutes into mixing? I'm referring to the regular yeast breads. I check the dough to make sure it's forming a nice ball. I usually have to add a little more flour when it looks wet on the bottom. If it looks too dry and crumbly add a T of water at a time. After adjusting, I watch the dough a minute. Again, I'm referring to yeast bread. I make 50/50 white/whole wheat. Also do you use bread flour not AP? I love KA. Don't give up! A Facebook bread machine group has been my go to. Hope this helps. I can't wait to try this recipe! 😊
