Unfortunately, I'm unemployed and in debt, & can't yet afford a cast iron Dutch Oven - they do look potentially dangerous! Using a substitute, does it just need to have an airtight lid, and how would I ensure that? Your video was absolutely fantastic. I've always wanted to make Sourdough, you've really inspired me. In the old days, whenever I had a new neighbour move in I'd introduce myself by bringing them a freshly baked home-made loaf. I found that a wonderful way to welcome them with friendship! I found you a few days into searching recipes for bread. I tried several others and was determined to learn all I could and start making all the different types of bread for my family. I gotta say, I love you. I have now done 4 of your bread recipes ( several times ) and have my first sourdough starter in the refrigerator I made yesterday. I've loved this so much I've made bread for neighbors and friends. By the way never made bread before now I feel like a professional. I bought both your recipes books and just incase mine doesn't work a package of your sourdough starter. Thank you so much. I can't say enough about your recipes and love the accent. You're the best! I watched other videos and listened to other so called bakers, but you are the only one who was able to explain and teach me through your excellent video, how not to make a frisby ( a bread that turns out flat). This bread turned out SO pretty I had to send pictures to everyone! Haha. It was fun to use my starter I made a couple of weeks ago too. The feeding is going very well. My house smells heavenly and this is the best bread I have ever made! The time it took was well worth it. I just tended to chickens, dogs, my indoor budding seedlings, and did house chores. Loved the cast iron baking method. I learn so much from you sir. Thanks again John!

Hi chef John. Thank you so much for this recipe. I’ve done many and seen too many videos. I feel yours is the most straightforward and fuss-free by far. A lot of the bakers out there treat it as an art, and there are way too many steps to follow for beginners. Handling wet dough like this is a nightmare for many. And yet your steps made it so easy to follow. This should be followed by beginners who just want a good wholesome loaf. They will get hooked instead of intimidated like many I know.

Thanks for this one John! You’ve simplified a lot. I don’t even use a banneton anymore; I get much better results now by not having to flip my risen loaf over; I don’t even score it anymore. In fact, nowadays I just make a big bowl of dough at 74% hydration and keep it in the fridge, cutting off 350g pieces each time I want to bake a loaf; I find 350g an excellent weight for my needs. I consistently get a well rounded loaf with great oven spring and a very open airy crumb.

I've made this bread three or four times now, and it keeps getting better with each bake. I tried Paul Hollywood's method but I think our oven can't retain the moisture which seems fundamental to the texture and crust. Thanks John for this video as the Dutch oven technique is perfect for the home family baker. I'm never going to be short of fresh sourdough ever again!!

John thank you so much for this video! Such a good instructor you are! This bread was a multiple-challenge project for me, from making the starter to scaring the dough. I am excited to report that my first loaf turned out well. Although not perfect :/ My loaf misses the big bubble-shaped holes yours have when you are cutting it. My bubbles are way smaller and closer to each other. Although my dough looked pretty much like yours and the crust is perfect. All about practise and good measurements Mi. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.

I've made this twice now. The first time, my dough seemed wet/floppy and was very hard to shape, but I managed to get it in the dutch oven after a struggle. The second time, I worked the dough more at the initial mixing, and I can already see the difference. It should be much easier to shape, and hopefully, it will hold it's shape. It makes a very tasty crusty loaf. Thank you for this recipe.

Thank you! I started a sourdough starter about a month ago and used it for the first time today following your recipe 🙂. It's delicious! I used Kosher salt, I probably should have used more than 10g, but the butter I used has sea salt so it tasted fabulous. The bread wasn't as airy as yours but that's ok!

Hi John, last week I made your Easy Sourdough Loaf for Beginners which requires 10 minutes of kneading (i used mixer which I love), however, this recipe there's no kneeling at all, you slap/fold for 6 times after mixing & one hour rest. Why is that? Because of the higher hydration? for this recipe, if I need to use a mixer due to my arthritis in my hands, how long should I mix the dough in the mixer before the one-hour rest? can I use the mixer to do the slap/fold? If yes, how long should I let the mixer do the procedure? can this recipe leave the dough proof in the fridge overnight? i love your recipes! thanks!

I regularly make bread using John Kirkwood's recipe's, but this sourdough is something else! It's the best sourdough I have ever made, even though the dough looked like the most wobbly bits of Jabba The Hub. The bread is tasty, sour and has a gorgeous texture. It took me ages, and a lot of bad language to get the hang of making Sourdough bread. But John's recipes always work, and so it was with this one. But with these high hydration doughs, it can easily end up in a hell of a mess, and even wetting hands has still been difficult. But here's a tip..... I've found that if one wears a pair of disposable Vinyl gloves, it makes it so much easier without any need to wet or oil one's hands.

Wonderful, nice work Russell, like I always taught my staff, always start a new recipe at the simplest point, the basics, once you crack it, then move on to improving on a recipe, especially bread recipes, SD or commercial yeast, but I've noticed a lot of my viewers want alter a recipe, even before they've tried it for the very first time. John you made it look so simple, as always. I have watched a load of sourdough bread videos and there is always lots of differing folding and rolling techniques shown which I found confusing. I did create my own starter successfully a few weeks ago and baked my first loaf a few days before your video came out and it tasted fantastic but not as well risen as yours. I haven’t a Dutch oven (yet) so used a tray of boiling water in the oven for the first stage of the bake. I look forward to trying yours very soon. Thanks for sharing.
