Update: Made this this weekend. Tasted great, but they're a bit heavy (did the overnight refrigerator proof.) Also, 100g of crushed nuts is about 4x what he actually used in the video. WAY too much nuts. Next time I'll use less nuts, and will try to see if I can time making these to allow for a room temperature final proof.

Here’s the recipe: Dough 150g whole milk 50g brown sugar 6g salt 1 Egg (50g) 200g active sourdough starter 400g bread flour 75g softened butter Filling 200g Nutella 100g Chopped hazelnuts Icing 60g whole milk 1 tsp (4g) vanilla extract 240g powdered sugar 226g softened mascarpone cheese
