My first attempt at baking a part baked ,then frozen,little sourdough bread!
I use 100g wheat sourdough starter
1cup warm water
1 tablespoon olive oil
Whisk together
Add
50g fresh milled flour (optional)
340g white bread flour (or 390g if not using fresh milled)
1/2 teaspoon sea salt
Mix well until it comes together then knead quickly. Place in an oiled bowl and cover with plastic wrap and leave overnight to ferment
In the morning do a stretch and fold in the bowl,re cover.
30 mins later repeat the folding leave another 30mins
Line a banneton basket or bowl with a cotton napkin or tea towel and dust well with flour. (Either make 1 larger loaf or split it as I did Into smaller loaves).
Now turn the dough onto a working surface and pull together into a ball shape,then roll it with cupped hands to create surface tension. Lightly dust the top and pop it upside down in the prepared baskets and tightly cover with a tea towel and place in the fridge for at least 4 hours.
Preheat oven to 200 degrees C with your cast iron pan/s inside.
Remove dough from fridge and turn out onto silicone slings or parchment paper. Cut slits/patterns on the surface to allow for expansion during baking.
Once the pan and oven are preheated, pop your dough into the pan along with an ice cube slipped down one side,cover and bake for 30mins
Now either uncover and cook for a further 15/20 mins, then cool on a rack or remove from oven,cool ,bag up and freeze for another day as I did in the video!
