Can you clarify, I get out out when I want to use it then feed it then use it hours later then feed it more, or I use it then feed it, in other words do I feed in twice when it's out of the fridge for use?

Hello! Take it out of the fridge and feed it. Then our later you can use it for your recipe. After using it feed it again then in a few hours, you can put it back in the fridge for another week. That is the process and routine of using sourdough starter in a no discard way. The video I have linked above is very detailed and has all the information you would need. Sorry for the late response. I don’t get notified when people comment to another comment. But yes, you mix flour and water together. For the first seven days you keep it on the counter and feed it once a day. Once it becomes active, you can put it in the fridge and only feed it once a week. I have another more detailed video. Hi- liked and subscribed. I have had several mind boggling days of watching overly complex videos about making sourdough starter…. I joined Facebook groups where it seemed people were in competition over the “science” of sourdough starter. My parents were from the old country of Germany and my mom and my grandmothers… going way back - they all baked only sourdough! I’m sure they didn’t have time to waste over the “science” of starter! All that to say- THANKS for this common sense and easy video. Going straight to my kitchen to whip up some starter now!

To give it a jumpstart, you can leave it sit on the counter feeding it a little bit once a day for the first 5-6 days or until bubbly. After that, storing it in the fridge and feeding it once a week for use is totally fine! Good luck! 😃

@@beltoftruth56 it's not gonna get bubbly on the counter for a couple days just keep at it... it doesn't happen overnight just keep adding to it every day and have patience about 5-7 days you'll get bubbly

Hi! I have another longer sourdough video that might be helpful for you! If you are starting from scratch, it takes about a week for the starter to become active and get bubbly. Once the starter is bubbly, it’s good to use! Hope this helps! Josh 😊

nice and simple, appreciate the video! i'm going to experiment with using the liquid leftover in greek yogurt (whey) for water on the first round and see if it gets my starter going faster. the first 2 weeks, are you keeping it in the fridge or does it spend those 2 weeks at room temp?

sorry I didn't get it. help please :) so how many times should I feed it before placing it in the fridge? I just started one yesterday, about to feed it now but it doesn't smell sour yet. I'm guessing I have to keep it in room temperature for some time before placing it in the fridge. Also I was reading discarding some starter before feeding helps to not grow bad bacteria etc. you never ever discard before feeding? thanks so much!!

Hello! Feed it once or twice a day small amounts while keeping it on the counter room temperature for one week, or until active, before moving it to the refrigerator. There are many videos out there about no discard methods. That is basically my approach to starter. Thanks for reaching out! It’s pretty hard to hurt your starter. It’s very resilient stuff! If you’re not using it and it’s just sitting in the fridge, I would confidently say four weeks/one month is pretty safe. So if you’re traveling or just forget about it for a few weeks it will be totally fine with no care. When you’re ready to revive it after a prolonged hiatus, just remove it from the fridge, discard 50%, and proceed with your typical feeding schedule. My starter lives in the fridge. I only remove it once a week the day before I bake bread to feed it and and get it active. Then after baking bread, it goes back in the fridge for another week. I hope this helps! It seems complicated at first, but once you get the hang of it, it doesn’t take much time at all. Have a good day! -Josh

Hi, Marina! Yes, on days that I am not baking bread, I keep it in the fridge. I remove it the day before I am going to bake bread to feed it and re activate it for bread baking. After I use a scoop of the starter for bread baking, I feed it and put it back in the fridge. The reason I put my starter in the fridge is to keep it from becoming too active. Others might not have this problem, and are fine to leave it out on their counter all the time! I actually have a more detailed sourdough starter video that has great tips at the end about this! Hi! The average sourdough bread recipe calls for anywhere between 50 grams to 150 grams, or a half a cup to 1-1/2 cups of active starter. Once you have a little more active starter than that, you’re good to start making bread! Thanks for watching! -Josh

I tend to use a combination of both. If I use all whole wheat I never have as strong of a starter as when I use a combination of flour. Whole wheat flours have less gluten structure and and don’t seem to make strong starters on their own. That’s my experience. Hope this helps! Thanks for watching! -Josh

Also, do not use anything metal for your starter either. The natural yeast will react to the metal and cause problems with the starter as well as giving an off taste of metal like. Do not stir with a metal object like a knife or spoon, etc. Glass is best and plastic or rubber stir item, like a spatula. I usually do equal amounts of water and flour though.

You do not put it in the fridge from day 1. It needs to be an active starter before refrigeration. It takes roughly 7-10 days if you are starting from scratch. You can use a 00 flour if you like. Not dumb at all! Glass is definitely the preferred method. The acidity of starter can slowly break down the plastic or leech microplastics into your starter. This also makes it easier to scrape or scratch your plastic container, making it harder to clean and therefore easier to harbor bad bacteria. Hope this helps! Thanks for watching! -Josh

Does the yeast multiply in the fridge in cold temperature? Making sourdough starter is a fermentation process, isn't it ?

You are correct, it is a fermentation process. It can still multiply in the fridge if you have an active starter, although it is much slower. The benefit to keeping it in the fridge is not having to feed it as often. I have a video discussing this in detail. I have a question for you, ……every time I see people use their sourdough starter , it looks like they dump the whole thing into their next bread recipe, and then it’s gone , but I want to use it every week , so what do I do ? And how can I continue to use it ?

Hey thanks for watching and reaching out! I use my starter every week as well. It takes roughly a half a cup to a cup(100-250grams) of starter for most bread recipes. As long as your batch of starter exceeds that amount you always have enough for your weekly bread baking. Example: I take my starter out of the fridge the night before I’m going to be baking bread and feed it. The next morning I remove 100-250g from my starter jar for my bread, I feed my starter again and in a few hours pop it back into the fridge for another week. Super simple. Hi, thanks so much for commenting! As long as it’s organic flour, I have had success with many different kinds, from whole wheat to white bread flour. I definitely recommend going organic if possible though. As far as temperature, if you are talking about the temperature that you are supposed to keep your starter at, it is more active when kept at a room temperature, or slightly warmer than room temperature. It’s totally OK to store it week to week in the refrigerator then remove it from the refrigerator a day before you’re going to use it. I have a whole video that goes into much more detail about this regarding sourdough starter. Once you have an active starter, then yes! After your starter has been fed, 4 to 6 hours later you can use it to make bread. On average it takes a half cup to 1-1/2 cups of starter per bread recipe. Yes, sourdough starter is only flour and water! After it sits for 7 to 10 days, it has started a fermentation process which allows it to cause bread to rise when you use it in a recipe. You feed it to keep it alive and continuing to ferment. Thanks so much for watching! -Josh

You are completely right. This was one of the first videos I ever made, and I honestly did leave out some of the details. Nope! The starter collects and contains natural yeast out of the air. There is no need for commercial yeast when using sourdough starter. Thanks for watching!

Why do people discard....why can't they just put it in another jar and continue feeding it or store in frig for future use?
