After a few tries and failed, finally my sourdough 😍
Broadly speaking, making sourdough is very, very easy, the key is not to be too late to feed, feed at the right time. As you can see in this video, there is no standard for how many hours we have to feed. Things I can note here:
1. Sourdough generally needs to eat 4 times a day (depending on the temperature of each room)
2. Good sourdough smells fresh sour, when sourdough gives off a bad smell, it's best to just throw it away
3. When we are late to feed, give 1/2 tsp honey or sugar as additional nutrition
4. When we have to leave the sourdough for more than 10 hours, it's best to keep the sourdough in the refrigerator
5. The remaining sourdough discard before 1 week of age should be discarded, after that it can be stored or used to make various Hybrids breads (mixed with a little instant yeast)
6. Sourdough should be fed at room temperature for 2 weeks
7. Sourdough starter can be started with plain water or oxygen water or fruit water like my previous video, the best results are with fruit juice, it will give a special aroma in every bread we make, the after taste is good
8. From this starter, stiff sourdough can be made in the ratio: 20:20:40 (1:1:2)
10gr Levain 10gr fruit juice (first day only) 20gr high protein flour
9. Every week, sourdough strength can be increased, in this video, on day 6, feeding ratio 20:40:40 (1:2:2) in week 3 can be 20:60:60 (1:3:3 ) 4th week to 20:80:80 (1:4:4)
After 1:4:4 it can be said that sourdough is already very strong
10. After the sourdough is strong in a ratio of 1:4, the remaining sourdough can be dried and can be sold (preferably sold after the sourdough is at least 6 months old)
