season & herb up your meats in various styles BEFORE you VAC bag to freezer store. this will help the flavors distribute much better and also eliminates a lot of time and re-seal waste. you can also save a ton of cook time by using the stove-top to bump up the heat of the water much faster, right to about 3-5deg under the target (about 145-147 F), then shut off the stove-top. and move the rig to a trivet to finish.
