Ben Lepsch it doesn’t remove juices if you dry brine for long enough. Salt pulls moisture but the moisture goes back in after a few hours causing your steak to be seasoned all the way throughout.

You are inspiring me to pick up some of this equipment and try new techniques to help me feed delicious food to my family at home. I also can't thank you enough for showing how to make a BBQ sauce... I have been wanting to make my own for a very long time now, but didn't know where to start. I know it's going to be good since I know that home made rub of yours is already amazing. PSA to anyone making Guga's BBQ sauce shown in this video: I just made his sauce, and it is good! However it is a bit bland, so I recommend you add 1/2 cup of white vinegar or apple cider vinegar and some extra salt. This will make the sauce amazing

I live near that Shortys BBQ and they went downhill years ago. They cook with no love anymore. I wish you have gotten Flannigans ribs instead vs your home cooked. Now THAT would be a real challenge!

For those who are not from Miami, if this is the Shorty's from Kendall, it is a legendary place. It's a shack that is voted best of Miami and has been around for over 50 years. You can order the ribs dry, wet, the baked beans are amazing, the corn on the cob and key lime pie are great. Also, their BBQ chicken is legendary. I still appreciate the effort Guga. 👍

Home cooked will always beat restaurant in my opinion. The only way the restaurant wins is in convenience. Everything you fixed looks amazing and I bet it tastes great too. Personally, I prefer a vinegar based sauce that is commonly used in Eastern NC. I would like to see your take on it and hear your opinion. Love your videos Guga. Please don't stop making them.

Can ya do a test of removing the membrane vs scoring the membrane? I've always found leaving but scoring the membrane left more juice and flavor and you can't tell its even there.

Best tip for a crunchy coleslaw >>> Salt your cabbage and let it sit for an hour to remove some of the water. Wash it and dry it and then add the dressing.

If I buy BBQ, I only buy meats. Living in Texas, I buy really good BBQ brisket, because there are places that do it better than I can. But, anything like fries or garlic bread is going to go soggy before you get it home.

Even in that Styrofoam for a few minutes the fries and bread will get soggy. The fries and ribs throw off too much heat and steam them. Of course they won't be great but I would still eat them haha. Looks amazing as always.

Idea for a recipe that I came up recently. Yet to try it myself. Basic idea is to sous vide a good piece of beef, prebake a pie crust, put the sliced cooked meat in it and make a jelly using the bag juices, herbs and vegetables and to cover the meat with it. Many people do not like gelatine pies, but some love them, such as the british.
