My Chow Chow Recipe:
16 cups of finely diced veggies
3 cups of vinegar
3 cups of sugar
1 TBS Garlic Powder
1 TBS Yellow Mustard
1 TBS Yellow Mustard Seed
2 ts Celery Seed
1 ts ground ginger
1 ts turmeric
1 ts All Spice

I want to add my thanks for demonstrating a great job canning! I'm over 60, grew up in a canning family and have done a fair share. I've seen some pretty scary examples of "canning" on KZbin. Thanks for setting the record straight.

My grandmother called hers “end of the garden” .. it’s different year to year but always fantastic! Thanks for sharing.

There’s a similar sort of preserve that we make in the UK, we call it piccalilli. It’s basically veggies (has to include cauliflower, for some reason!) in a sweet and spicy vinegar, like yours - very popular with a ploughman’s lunch (bread, cheese, ham & pickles). I think it originated from India during the Raj period.

Revered Southern food historian John T. Edgerton asserted that the name originated from a condiment made by Chinese railroad workers The origin of chow chow remains somewhat of a debate. Some say that it found its way to the Southern United States during the expulsion of the Acadian people from Nova Scotia to their settlement in Louisiana. The name chou is French for cabbage. Either way it's very interesting.

Wherever it came from it is a perfect way to preserve and make the most out of a crop. In India, France, Central Europe, the southern US, Ireland and the UK,and even Oriental countries they found ways to preserve the vegetables that would have been destroyed by the first freeze whether they were ripe or not. It shows just how adept those folks were at food preservation and planning for as close as possible to no waste to find ways to make unripe produce very tasty and shelf stable.

This recipe is amazing! Thank you for sharing! Followed the recipe but I didn't have ginger, so I replaced it with 1/4 tsp nutmeg and 1/4 tsp cinnamon. Turned out delicious! I will definitely be adding this to my yearly canning recipes. Blessings!

I have heard it called "Chow Chow" and "END OF GARDEN". There is so much variety that can be in these. Your choice of cabbage, (someone used Chinese Cabbage) onions, peppers: sweet or spicy, any variety of squash, cauliflower, green tomatoes, egg plant, corn, green beans, ect..... I love having Chow Chow next to my cottage cheese. To me that is a great combination besides the fact that is how it was introduced to me by my Nanny. Sure do miss her. She canned all kinds of stuff.

My husband has talked about his grandma's chow chow ever since I've met him. I am going to have to make this for him. Saving this for future use. (I'll have to save up to get a canner, but it's on my list) Thanks! I know it's going to be good.

You can make and preserve chow chow without a pressure canner. You can use water bath canning method for some food. Use large pot tall enough to boil water that is at least one inch over tops of jars. Need to have a towel or rack in bottom of pot to protect jars. In my location, only need to boil five minutes or so at boiling to process. This is called "water bath canning" and is only appropriate for certain foods.

Not saying how long food is safe but if there are jams and preserves that are years old, I make the Betty Crocker Cookbook Filled Cookies and use those as the filling. The cookies are a good quick grab and go breakfast or snack and store well. The other day, I made a flakey pastry and cut it like a pop tart, stirred in a lot of cinnamon, nutmeg and sugar to an old jar of pear preserves (like apple sauce) and used that as the filling. Reminder to rotate your dates.

My father my mother and I made chow chow every year and we used it with our pinto beans with hog job and Cornbread or corn pone sliced tomatoes and sliced onion that was a favorite meal my brother loves it and he now has Alzheimer's so next year I am going to make chow chow to make sure he has some before he can't remember it

Oh my goodness, thank you so much for this recipe. My grandmother used to make this. It was the only way I could eat soup beans. I can't wait to do this when garden season comes.

I’ve never had chow chow before but made 10 pints this year because of a ton of green tomatoes. I have been eating it out of the jar when I want something sweet and crunchy and spicy ( added hot peppers 🌶)😁. I can’t imagine this sweet relish on corn bread or beans since all of my beans except bake beans are savory. But since everyone seems to use it that way I will give it a try!

I make a version of this at the beginning of the summer and then again at the end. You would have a lot less waste if you cut all the veggies closer to the stem, like the squash and peppers, that part is great for this type relish.

My mom used 2 can chow chow from r garden or like u said what ever u have. I sure miss that. My hands don't allow me 2 do that kind of chopping anymore of arthritis. Sigh. U made me hungry 4 it
