I like to make a batter with 60% vodka by volume in the batter instead of water. The vodka burns off in the fryer quicker than water and the end result is a crispier crunch on the outside. Vodka is neutral so you can’t really taste it. What a great recipe Malcolm. Excited to try it this week end. 😘

I was an outside salesman for an international company. The job required that I travel through six southern states. One of my favorite meals was fried fish in general. I must admit that my favorite fried catfish was hands down in Jackson Mississippi. Thanks for your information. Maybe I can do this.

Used to go to Malone’s on county line road when we lived in Tupelo. They had whole catfish & strips. Maaannnn… best catfish I had ever eaten!! I miss Mississippi & the people there.

Corn meal, hot sauce and tartar sauce is the only way to eat catfish. Peanut oil is the best for deep frying fish. Perfect dish big man!

Back in 1985, I managed Church's Chicken. At the time we rolled out fried catfish, which was advertised as "pond-raised." But it still tasted dirty, as catfish are by nature bottom-feeders. A few years later, I started with Sizzler, who also sold fried catfish. That stuff was the real deal, pond-raised for sure. But we fried the entire filet, and it came out fine. This was about 1990, when Sizzler was a real player in the industry. Our fresh fish was superb, because we handled it right.

Looks excellent! My 2nd favorite meat is flathead belly meat, deep fried or grilled. Pan seared or blackened I still prefer channel cat.. ( so I guess that is my 3rd favorite)

Good video. I live in a state where trout fishing is king. However, I don't care to eat trout. But it's fun to catch, take a photo, and release 'em! Yet, I do like catfish and walleye and we have those out here as well. I like to fillet and fry each in a fryer. Mmmmmmmm. Never tried peanut oil, but I'll give it a try since you say it's good. I'm going to try your tarter sauce recipe as well. By the way, I have a cousin down in Tennessee who used to have a little diner that served nothing but fried catfish, coleslaw, and hushpuppies (as well as soft drinks). That's where I got my love for catfish. Also, I had a professor, who was a good friend to me in college, that got me hooked on walleye. Mmmmmmm. Thanks for the video!

i like that you season it first as so many season the breading which will not be enough and will fall away, leaving the fish plain tasting. the only difference i do is to rub mayo, not egg, on the fish, and then add the seasoning and then the coating. in my case, panko mixed with corn starch.

YUM, looks tasty! In Central Illinois we look for channel catfish. Where can you purchase Mississippi pond raised catfish? Hush puppies are tasty also!
