Southern Scalloped Corn Family Recipe from late 1800's. Join me while I prepare a recipe that has been in my family forever. It is the most wonderful corn dish. It will become a family favorite.

pre heat oven 375°
1 can yellow corn drained
1 can creamed corn
(you can use fresh corn, frozen, homemade creamed corn)
2 eggs
almost 1 cup evaporated milk, (or light cream, half n half or milk). 7 oz.
1 stick melted butter
1 1/4 c crushed saltines or butter Crackers.
1 Cup grated cheese
1/2 onion lightly grilled in pan w a touch of oil.
1/2 t salt
14 t pepper
1/2 t paprika ( I forgot it)
1 full t granulated sugar
one chpd onion
Beat 2 eggs in baking dish until frothy. Add milk. Mix with fork. Add can drained corn and can creamed corn. add onions
mix 1 cup Crackers with over half the butter,
pour into baking dish.
add 3/4 C grated cheddar cheese. with fork. add sugar, salt, pepper. Mix with fork .
add remaining melted butter to 1/4 C crushed saltines.
add remaining cheese.
mix w fork and Sprinkle over the top of corn mixture.
BAKE 375° for 30 minutes depending on your oven.
make up to 3 days in advance without topping until prior to cooking.
freezes well scooped into Gallon Zip Bag without topping.

exact recipe substituting canned diced drained tomatoes for the corn.
substitute brown sugar for white sugar.
NO CHEESE.

Cheese, corn, crackers and a whole lotta Southern goodness is what this mouthwatering recipe requires. Passed down from one generation to the next, you are witnessing 180 years of corn scalloped deliciousness that was enjoyed by beautiful Angela’s family dating back to her great grandmother, utterly fascinating. Aside from the flavorful ingredients and spices, canned yellow corn and a can of cream corn is what the recipe calls for. No shucking or annoying corn silks clinging to everything in sight. As usual, Angela combines all the ingredients stirring, mixing, blending and whisking adding a can of carnation evaporated milk (6-7 ounces). Saltines, butter and cheese for topping. One tablespoon of granulated white sugar to give it that extraa ‘somethin that Angela swears by. Cooked at 375 degrees for 30 minutes and voilà! Heaven disguised as irresistible scrumptious custard with a Southern influence that goes back generations. Thank you for sharing your delectable recipes and the wonderful story of your grandmother substituting the corn for canned tomatoes and using brown sugar instead is a hoot. Savory Tomato scallops which I’m sure just about shut the whole place down, YUM! I’m in awe once again….. aaand now I’m starving. Bon appétit! 😅😋🥰😘

Sounds like a big dog in your house. I just seen you for the first time and it was good not to see animals in the cooks house, especially in the kitchen. But when I heard the dogs I thought oh no.🤦

I have a gate up. My dogs do not eat in the kitchen or come around food. In case dog hair flies around I disinfect before I begin to cook. I am obsessive about the kitchen. We no longer have a cat but when I did mine were trained to never get on counters or tables. Every now and then I make a video in the kitchen with my digs getting treats. Never around people food. ❤

Our family's old time recipe from my grandmother (born in 1880 in Missouri) was made with 6 slices of white bread cut into cubes then toasted golden brown (but not too brown!) in lots of butter (bread needs to be soggy with butter) in a cast iron skillet to which we added 2 drained cans whole kernel corn, 1 can creamed corn, 3/4 C. milk, a bit of sugar, salt, and a generous amount ground black pepper, then baked at 350 until golden brown on top (about 45-55 min). Then we let it set for 5-10 minutes before serving. It is so YUMMY and I've never seen another recipe like it.
