When it comes to a side dish, this CORN CASSEROLE is on the top of my list of favorites. This side dish goes beautifully with just about anything, I love it so much that I can eat it all alone, hot, warm or cold. My whole family loves it and it’s one of the first dishes everyone goes to on the buffet table. I always prepare a double batch for thanksgiving and Christmas a d when I need a dish for a potluck, this is one of my favorites to take, and I always give out the recipe a few times, I know it by heart. This corn casserole is so easy to prepare and it’ll never let you down. I hope you give it a try. ❤️

INGREDIENTS _________________
1 stick of salted butter (melted)
1 14.5 oz. Can Creamed Corn
1 15.25 oz. Can whole kernel sweet corn (drained)
1 large egg
1 C. Sour cream
1/4 C. Chopped green onions (white n green parts)
1/2 tsp. Sugar
Pepper as needed (optional)
1 8.5 oz. Box Jiffy corn muffin mix
Non stick spray
TOPPER_________________________
Chopped green onions (as needed)
Freshly grated cheese of your choice as needed (i used mixed Sharp cheddar and Monterrey jack)
TIPS__________________________
1. You can double this recipe, if you do, add 2-4 eggs (I use 3)
2. You can replace Sour cream with Greek yogurt or Mayonnaise (you decide)
3. You can use fresh, frozen (thawed) or canned corn
4. Use an 8x8 dish or 9x13 if doubling the recipe)
5. For heat you can use finely chopped seedless jalapeño or can pickled jalapeño (drained)
6. You can add finely chopped bell pepper (green, red,orange or yellow)
7. Bake till no longer jiggly In the center
8. Bake single recipe for approximately 45 minutes
Double recipe needs to be checked at 45 minutes and baked Longer if necessary til no longer jiggly in the center
9. Using a metal pan make take less Time than glass
10. ALL THESE TIPS ARE SUGGESTED, but you decide if you want to follow these tips or not, the decision is yours.

At nearly 80 years old I have seen a lot of cooks. But you are probably the most informative instructor that I watch on KZbin. I may not plan to use your recipe exactly but your explanation and directions are enjoyable to watch.I will be recommending your channel to anyone who wants to learn how to cook something. 14.5 ounces and 15.25 ounces for your canned corn. They USED TO BE 1-pound cans back in the day before the age of smaller cans = less product and raise that price, too!

What I love about Rachel(actually everything)is she has everything ready and you dont have to watch cans being opened or potatoes peeled, I want to see the actuall receipe being prepared. Love corn, cant wait to make this dish.

I only recently found her channel and without even seeing any other comments I told a friend who I shared the channel with, that I thought it was so cute how she says " my Ron". What a huge library of recipes she has. I want to try them all. Her fried chicken recipe was the first one of her's that I tried and it is the best I have ever made, easy with super clear instruction. I am cooking this corn casserole tonight with chili and a salad.

I love making something very similar but I like to bake it in muffin tins. This way I can freeze them and take out one or two as needed. I can microwave it or heat it up in the toaster oven. Great with a bowl of Chilli or soup or as a side for a roast turkey, bbq chicken or brisket.

I lived 69 years in south texas. We called this Mexican cornbread we added browned hamburger. Had a salad n iced tea.❤️. Dinner served👍

I'm going to add a can of hatch green chilis next time. I used one of my last summer garden chopped red cherry bomb peppers this time and it was pretty and delicious.

A gutting loss. It never goes away, but I have come to appreciate that it doesn't. That I feel that deeply reinforces how much I loved her. And that remains precious. It does change over years and becomes comfort rather than pain. I hear her counsel and think of her life at the age I am and learn from it. Four months ago, I became older than my mom. It feels weird to be traipsing on ground she never walked. The love is always.

That looks so delicious. The best I ever had was in my hospital cafeteria in the early 90s. They served the best food. Some older Southern ladies were great cooks. The best dressing and gravy. Fabulous rolls, cakes and pies. Not a bunch of frozen stuff back then.😊

At our Family Night Pot Luck Suppers at church, a lady used to being this same recipe minus the onions and cheese at the end. Think she made a double recipe If you weren't close to the beginning of the line, you missed out. Every one loved it including me. She gave me the recipe. Yummy.

Rachel, just a suggestion for someone who would like to have meat in the casserole. I add half inch cubes of wonderful ham to the dish when pouring it into the casserole dish, and that makes it a great complete meal casserole, for someone who would like to have meat in it!

Definitely use fresh jalapenos. The cooking calms the heat; plus, you can de-rib and de-seed according to your heat preference (seeds and ribs are where the heat resides). I like heat and I like color for presentation, so I sprinkle a little cayenne across the top of the cheese before putting it back in. The cheese and cayenne meld together, the taste and mouth feel is great. Yes. Thanks, Rachel.

MIL rule: Thanksgiving requires this recipe (full tilt white, though). 2 eggs, local baby swiss cheese. And we NEVER have enough. You think that it might occur to one of us to make two casseroles of it. But no. We are cart horses. God I love that recipe

I didn't have sour cream, I used a combination of cream cheese and cottage cheese and blended with a tablespoon of white vinegar. It worked. Wonderful tasty casserole! Thank you!♥

This dish mixed the night before and baked the next day truly allows the best tasting casserole. The flavors have a great amount of time to come together.. IMHO

👋 Hello Miss Rachel and "my Ron". I made this tonight , it was very tasty. I didn't have a jiffy mix, so I used 3/4 c cornmeal with a generous 1/4c flour. Then I decided to add a teaspoon of baking powder, I think it was the right decision. TY for your generous suggestions for substitutions. Now I want to conquer flour tortillas and corn tortillas!

I've always made kind of a corn soufflé, and it's such a production. This looks so delicious and SIMPLE! I think I'll be adding some cotija and hatch green chiles in the casserole... I can't wait to try it.

This looks absolutely delicious! My Mom makes a corn casserole with the tube of frozen corn. 1 whole kernel and 1 white cream corn. It is truly amazing!

Rachel, I made your casserole today. They didn't have green onions at the store so I substituted yellow onions. It was delicious. My husband had seconds, and my brother said he could eat the whole pan. I'm going to try it Italian style next time, using ricotta, and a little touch of oregano, I want with the red pepper flakes rather than the jalapeno. Such a perfect recipe just in time for holiday cooking. And so delicious to boot! Just love the tweaks you've made to this recipe and as I haven't made a corn casserole in a while, looks like I know what side dish I'll be serving for Sunday dinner. I made this yesterday and it was absolutely fabulous! A really great recipe that works. (My pan was 8 X 11 and it was fine). Thanks, Rachel! I love this recipe and I REALLY enjoyed your video. So clear and friendly. I will be watching for more. I especially like how you make so many possible suggestions for variations and invite us to use it as a foundation we make our own. The ONLY problem with this is it's so incredibly delicious, I could hurt myself devouring it all ;-D I packaged up most of it for my son to take back home.

My husband has made a recipe very similar to this for several years. While he omits the onions, he chooses to use brown sugar. The unexpected sweet touch always gets rave reviews, and often have folks going back for seconds. I like your idea of topping with shredded cheese! Thank you for sharing your recipe, and inspiring us to explore in the kitchen! 💕

My mom made a similar recipe; her version called for an 8-ounce brick of cream cheese. I don't know if that was in addition to the sour cream, or in place of it; I'd tend to think it was in addition, when I recall the taste. In any case, it was something that always made an appearance on the table at Thanksgiving, and of course it would be just fine for Christmas and others. Many thanks once again for all the wonderful recipes, and for your willingness to share them with all of us!

This is wonderful if you add can chicken, it tuna, or just top it in with chili beans and cheese. Salad on the side and you have a quick meal.

I made it for thanksgiving it was a hit. The only thing I encountered was that the baking time is longer than suggested even though I used an 8x8 dish. The middle takes a longer time to bake. I’m making another one right now just because I had the extra ingredients. Winsome from New Jersey

My Mom always made Cornmeal Casserole (Notchynka as a Ukrainian dish), but I have never had a Corn Casserole ever! Based on the comments it sounds like a real keeper recipe. I will have to try it out and I am a lover of Creamed Corn out of the can as well as Corn Kernels so I can just imagine how heavenly it will taste! ❤

This is one of my favorites, too. I like to add a small can of diced chili peppers and chopped cilantro to the batter. Tasty compliment to a bowl of chili. Very nice presentation Rachel--happy to have found your channel!
