L Ortiz I can’t wait for Monique to make one so I can add it to my list. 🙂 I made an easy quick pineapple upside down cake on Easter. I used the box yellow cake but instead of water I used pineapple juice. And instead of oil, I used melted butter and I doubled it. So if it asks for 1/4 cup of oil you’re using a half a cup of melted butter. And if it asks for three eggs, add an extra egg or two to get more of a bakery style cake. Once you prepare your mix, use a half a cup of melted butter on the bottom of your pan and take a half a cup of brown sugar and sprinkle it all over the pan then you’re gonna lay down your pineapples and you’re maraschino cherries. I prefer cutting my pineapple rings in half. I also use baking/cooking spray to greasy my pan. Baked it as per my instructions and it was a hit. No cake left.
