Just made these with some ground Texas venison. Absolutely delicious. Had some fresh eggs from my buddies yard. Served over Rigatoni. SImple and easy. Tender and flavorful. Winner as always.

Halved the recipe and used only beef. Absolutely amazing. Thank you for sharing your skills and knowledge with us. I'm a 20-something full-time student and really look forward to your videos. I've always loved making my own homecooked food (cheaper, tastier, and fun!). However, your videos have really helped me take it to the next level by teaching me cooking techniques and how to create more things from scratch. Now as far as how my experience went, I think mine had more moisture than yours (would have liked mine to be a little more firm) so I think I'll try leaving them in the oven a little longer than 30 min so they can cook off more water maybe? As for the sauce, I am never using premade sauce again! This was fantastic. So much flavor. I simmered mine for an hour and a half and I halved the recipe for the sauce also. I added red pepper flakes and loved it. Thanks again, Chef!

I finally got around to making the meatballs. And, let me just say my wife LOVED them. She talked about them the entire night and loved all the spices included in the recipe. Mad props to you on this one!!

1, I would not use so much bread. I use some seasoned bread crumbs or seasoned croutons. 2, I would not use so much sausage. maybe 1/2lb. 3, what size eggs? 4, Italians seldom use Rosemary in their meatballs. Outside that okay.🍝

1. I tried using seasoned breadcrumbs and croutons in meatballs because I seen a recipe & was curious, personally didn't like at all. 2. The Chef in this video did NOT use sausage at all, in fact he specially said "not sausage" He used ground pork. 3. The standard size egg used in recipes is large. 4. You said "Italians seldom use rosemary in their meatballs" That is clearly your opinion and definitely NOT a true fact. 5. You said "Outside that okay" Did you actually make this recipe? 6. No where does the Chef claim this to be "authentic meatballs" This is solely his version. Although I've made & used the same meatball recipe for well over 40 years, I enjoy trying others recipes, my family don't like me to stray, LOL but it's nice to try. I truly enjoyed Chef Billy's recipe, it's a good quick meatball recipe and my Son appreciated taking the left overs home, this recipe won't replace mine but I have made it a few times now, just to switch it up and I like when folks notice it's not my recipe but they still enjoy.

If you’re a great cook, you need to cook for a crowd as people will eat like there’s no tomorrow. I know, I’m a good cook and a great baker. I can’t decide what kind of cake to bake for a party next week so I’m making chocolate with cream cheese frosting (requested), German chocolate with coconut pecan frosting, strawberry with cream cheese frosting and a French silk pie. The guests will be thrilled. Today I’m baking a small banana cake with cream topping fortified with cream cheese to hold its shape. I’m going to use extra creamy cool whip because it’s just for me and I don’t mind.

Hey, Chef have you tried using milk instead of water? it adds a little love. I also cut up bread, add it to a bowl of milk, rest, squeeze milk out, dump milk, and then add meat to the same bowl. We all love fewer dishes :) Stay safe

LOL, Even though my sons are grown and gone, and it's just my husband and myself now, I don't know how to cook for just Two. It is impossible in my Puccio DNA to cook for less than 20 people! Hey Chef Billy! These meatballs look so mouth watering! I'm definitely ready to bake these this week (with tons of leftovers for sure)! Question for you, my boyfriend is severely lactose intolerant, so I've been using lactose free products as a replacement for most ingredients! The products are made of dairy from a cow (so not vegan), but the lactose is taken out, so his stomach can process the dairy! I haven't found a lactose free parmesan cheese yet, but did you have any recommendations for a replacement? If not I completely understand! Thank you in advance!

Chef Billy, i have a question about cooking these meatballs the 2 ways you show us, but last time I made them, I boil them in water instead of frying or cooking in the oven. Can you give me your opinion on this way of cooking the meatballs.

the problem with boiling is that you don’t get the reaction that causes browning on the meatballs which gives good flavor. it will also ruin the texture and suck out any flavor. think about how vegetables are used to make stock, afterwards they have no flavor because it transferred to the water.
