NOT AMERICANS Mr.Stein for sure. This well-known dish because most people I know get it completely wrong, either adding milk or cream or letting the eggs become scrambled. This recipe is the real thing. It was brought to Lazio from Umbria by coal men (carbonari), who came to sell charcoal to the Romans. Since then it has been adopted by the Romans and is famous worldwide. Ingredients used to make this amazing spaghetti dish. In Rome we use two types of pasta with carbonara; rigatoni or spaghetti. They are both delicious swith this sauce. Ingredients to use for 2 people: - 90/100 gr of Guanciale or Pancetta - 3 Eggs - 80 gr Pecorino Romano (cheese) - 1/2 tsp Black Pepper - 1/2 tsp Salt - 200 gr Spaghetti So simple! Isn't it?

I have made this and it tastes amazing. All I wanna know is why do people always have to criticise. Who cares if it's not supposed to have garlic or parsley. I have tried it without them and it doesn't taste that good. You need the garlic and parsley. Why does there always have to be cooking snobs who think they know better? Anyway Rick this is a great dish. I'm glad for it because I always used to order in my carbonara but now I can make it myself and it tastes so much better. I prefer penna instead of spaghetti though works well. Thank you 🌸🌸

To each their own, I personally don’t like garlic or parsley because I want to taste the fat from the meat as the garlic overpowers it, but you shouldn’t be slandered for liking garlic in it

The whole thing is really quick, about 10 minutes once the water is boiling. Yeah you don't want to scramble the egg.

Not everyone has access to Guanciale, so pancetta is a good substitute. And who cares if he puts garlic or parsley in his dish, if anything, it enhances the flavour.

The recipe here isn’t the one I use at all- this one is actually more complicated! No garlic. No parsley. No oil even. Just 3 egg yolks, pancetta cooking in its own fat, pecorino cheese, pepper and of course, spaghetti. Amazing flavour too

to be strict, you do not use garlic, parsley or pancetta in Carbonara, you use thin slices of cured pork cheek (guanciale) kind of on the side of the dish, not in it - but at least he is not adding cream like these other so-called cooks (no names Marco)

C'mon Rick! It's such a simple recipe, why don't you get it right? No garlic, no parsley, GUANCIALE, not Pancetta. one more thing there is no such dish as spaghetti bolognese, NEVER use spaghetti for you your ragù alla bolognese! The correct pasta, the one that is served in Bologna is tagliatelle (egg pasta). You can do it, try again!

there is no parsley and no garlic either, no oil for the pan either and it's guancialle not pancetta. better use cream and call it something else.
