I love doing dishes like this. I normally throw some mushrooms and bell pepper in with the onions and mix it into the sauce and instead of ground turkey i bake a chicken breast and then some low fat mozzarella so its like a chicken parm bowl. It makes it easier for me to make sure Im getting enough protein

The squash can become 'mushy' if it's reheated, so it's best to serve and eat hot. However, you can always divide the filling and make smaller portions. -Andi
