Ingredients (Serves 2)
300 g spaghetti
2 garlic cloves, minced
1 onion, finely diced
200 g fresh spinach
200 g cream cheese
300 ml milk
2 tbsp olive oil
1 tsp paprika powder
Salt and pepper to taste
50 g grated Parmesan cheese
Juice of half a lemon
Instructions
Preparation:
Dice the onion, mince the garlic, and roughly chop the spinach.
Sautéing:
Heat olive oil in a pan. Add the onion and sauté until translucent. Add the garlic and cook briefly.
Cooking the Spinach:
Add the spinach to the pan and cook until wilted.
Making the Sauce:
Add cream cheese and milk to the pan. Stir well to combine. Squeeze in the lemon juice. Season with salt, pepper, and paprika powder. Stir in Parmesan cheese and let the sauce simmer on low heat.
Cooking the Spaghetti:
Cook the spaghetti in boiling salted water according to the package instructions. Reserve some pasta water before draining.
Combining:
Toss the spaghetti with the sauce. If needed, add a splash of pasta water to adjust the sauce's consistency.
Serving:
Plate the spaghetti, sprinkle with Parmesan, and serve immediately. Enjoy!
