The cheese curds looked really great. I'm impressed with you Spam collection. I didn't know Canadians knew what white gravy was. I might need to do a little more investigating. Best end of September, SPAMtember video that I've seen all year!!

Great job, Fernbark. I love poutine but you are right about the saltiness, especially if you start adding porky goodness. Homemade gravy really helps but I'm a purist myself - just squeeky curds and brown gravy for me. I believe I'll be visiting my favourite local chip truck this afternoon. Thanks!

That looked good. Correct on the choice of brown gravy. Here in Canada, we don't use white gravy. That was the best "SPAMtine" video I watched today for sure. Actually the best one I ever watched.. 😉....Take care, Bluefin.

The important thing is, did the cheese curd squeak when you bit into it? That is how you tell if they are fresh. Ones that have not been put in the refrigerator are even squeakier. I make poutine for her at least once a week. Cheese, Spam and canned gravy are all high on the salt list. You could have cut the salt a lot by only using half a can of Spam. The Taste Testers take care of problems like that for me. I have never seen poutine with white gravy. I do not eat them myself, so I am not an expert, but I have heard enough bitching about poorly made expensive poutines that I got to pay for. Like $10-$12 Canadian. Spam here is like $5 a can. The no name stuff is like $2 a can. You had like $500 in Spam on the counter. Loved the TPB music. Had good potential. I bet if you made a home made grace from the Spam grease that'd be the way to do it. Then you'd have less salt considering the canned gravy had a ton too.

Did the curds still have the squeak after your trip home? I buy them from the creamery 2 miles away and the proper squeak is guaranteed.
