Yes I miss cooking with my mother in the kitchen I started at seven years old being her little helper I really didn't like it I wanted to go out and play but back then we had chores to do I am so grateful for my mother teaching me as I got older how to make dishes now I am retired have plenty time on my hands and it brings back memories everytime I cook our favorite dishes straining the spanakopita was my job also squeezing squeezing and squeezing it and it was cold never forget that stuff mom's words make sure you get all that water out LOL she'd say it five times very important

Aww, your Mom is so pretty and I love her little accent. I can see you as a young boy baking with your Mom in the kitchen, laughing and tasting all of the cookie dough. Cooking is such a great bonding activity and a great way to keep traditions alive. My Grandmom had me baking with her as soon as I could stand and when my little cousin came along it became all 3 of us and now I have a nephew and I started baking with him when he could stand on a chair without falling. It's something I cherish. There is sometime really special about doing something the same way for generations.

I learned how to make this in Grease. I'm Italian & grew up with Greeks as my best friends. They make homemade filo & they make it look so easy. I use frozen filo. They use spinach, green onions, feta cheese and cottage cheese. Fresh dill, Eggs & a cup of oil. I cut the oil down to a bit under a 1/2 cup, because you have to put oil between the filo sheets. When done baking it I dump the extra oil into an empty coffee can. So, my Italian family loves this dish. I make it every Easter. A huge pan. Then, the rest of the meal is all Italian. I think I'll surprise my Mom & make this today. It's so yummy. It taste so good cold the next day. When I was in Russia I learned how to make Russian fried potatoes, they put mushrooms & dill in them. They fry the potatoes slices in butter add mushrooms & fresh dill. They serve them with Sour cream. The best potatoes Iv ever eaten. We adopted our baby from Russia just in time. Putin closed Adoption to Americans. Russian people cook with a lot of butter. They are warm & welcoming people. Love your channel. I enjoyed watching you & your beautiful Mom make this recipe. Have a beautiful blessed day.

You are refining some of my methods with your tutorials. Every single time I follow one, the result is perfection. I made your vegetable quiche yesterday. The lemon zest in the crust really wakes it up and the vegetable, herb and cheese combo made my very particular and conservative 85 year old husband greedy. I made this recipe tonight and it turned out excellent. I had slightly less spinach than what you called for(About a cup less )but just added 4 eggs in instead of 6. Also made it in a 9x13 and my phyllo sheets fit so well in that. Turned out crispy and perfect. Taste was great!

I just had a dinner party where I made this recipe for spanakopita and also your easy Greek salad and both were a huge hit. Everyone said this was the best spanakopita they've ever had. I used ghee since it is clarified butter for the phyllo dough and it was perfect. I also made a Mediterranean salmon (not your receipt but I bet you could come up with a great one!) and the three dishes made a complete meal. I wish I had remembered to buy enough ingredients to make one for the freezer, but at least there are leftovers to enjoy tomorrow. Thanks so much for your recipes!

Oh I just loved seeing you cook with your momma! She looks like a classy lady and it’s obvious you have a loving relationship. We too have a wonderful relationship with our two sons (twins both 27yrs old) & also enjoy spending time together. They are real foodies and I’m always sharing new food recipes with them. I’m going to make this one for my family and also for night when some neighbours come by for a glass of wine on our back deck overlooking the pond while watching the geese.

Love your recipes and your mum is so sympathetic! Just a friendly tip from a greek gal: Use red onions along wit spring onions and saute them in extra virgin oil. Also, avoid butter between the fyllos, use olive oil instead. And last, but not least, my secret ingredient in the spinach mix: cumin. It elevates all flavors! Cheers!

Your mom is so super pretty! You can also squeeze the spinach bu hand to save paper towels Also- you can make a huge batch of filling and freeze it in separate quart freezer bags. Then defrost as needed overnight to assemble it fresh with the filo Also make your mom butter nut squash in brown butter with toasted hazelnuts and crispy sage. As a side dish or over pasta with some grilled chicken/apple sausage and garlic sauté spinach I love the addition of the soufflé eggs

My daughter met a boy on the bus the first day of school who also had Greek heritage. But, later when she proudly showed off her spanakopita for lunch, he'd never heard of it. She said, "Are you sure you're Greek?" :-) I live with a tiny yaya. She is friends with him 4 yrs later-- and brings him Greek food from time to time.

I've made so much spanakopita, especially while catering. I was always the one because everyone else hated using phyllo. Baklava as well, I actually have a bunch of almonds, walnuts an pecans on hand. But lost my traditional recipe I got from a friend from Greece, I'm sad. It was passed down an it was very special I received it as a present. Theres also a dessert using phyllo an oranges, I dont remember the name but I wish I had the recipe because it was so good.
