How refreshing to see an American woman cooking from scratch using fresh ingredients, you've restored my faith in my cousins over the pond - I'm from the UK. I've seen so many truly awful Americans 'cooking' with processed foods that I've despaired. How wonderful that you're using family recipes too. I love Greek cuisine and have visited the islands many times so I'm very familiar with many of their dishes. I've often bought spanakopita from the bakery and taken it to the beach for my lunch. I've lost interest in cooking recently as I've no one to cook for but you've inspired me to cook again.

I see you have a Burky. They are the the best. A little hint about making whip cream, add Ttsp of dried milk to every cup of cream,it will really stabilize your cream.🙋🏼♀️

A pretty good attempt/version... but it is missing a critical step in my opinion, especially if one is going to use older/larger spinach or bunches as you mentioned. Chop and wash as you mentioned, but no need to dry. Place in your large bowl and sprinkle with about 1-2 tsp of salt for the amount of spinach you had there... and toss the spinach around, kind of squeezing lightly with your hands for a minute or so. Leave it to the side for about 20-30 mins or so, then grabbing a handful of spinach at a time, squeeze the dickens out of it... repeat until all the spinach has been squeezed dry. Your end product will be much better. It looked like there was still enough liquid in yours to make the bottom look a bit soggy...and this would have been worse with spinach from a bunch... baby spinach is a bit thinner so doesn't hold as much liquid. It is a game changer for spanakopita. Mom used fennel tops vs dill... and never used mint. I've tried it with mint and it is ok, but the fennel really works with this dish. It is hard to get so dill is a good sub, but if you ever get the chance to try it with the fennel greens, I highly recommend it. She also added finely chopped white onion and leeks, as well as the green onions, to hers.
