I show you why Greek moms make perfect spanakopita triangles. My mom Georgia's are the best by far with crispy golden phyllo triangle bundles wrapped around Greek feta cheese and sautéed spinach, fresh dill and green onions. I share with you her old world secrets plus some modern tricks. They are so popular that we inhale them in a flash. FULL RECIPE BELOW.

RECIPE: SPANAKOPITA TRIANGLES
1 cup washed spinach leaves, packed ( 250 ml)
1Tbsp. olive oil (15 ml)
3 green onions, chopped
2 tbsp. fresh, chopped dill (30 ml)
1/4 cup good quality feta cheese, crumbled (60 ml)
2 eggs, beaten
1/4 cup melted butter or Greek olive oil (60 ml)
6 sheets phyllo pastry
cracked black pepper to taste
pinch freshly grated nutmeg
Instructions
Preheat oven to 375 degrees F
Wash spinach and immerse into boiling salted water for about 3 minutes. Drain and rinse in cold water. Squeeze out all excess moisture and reserve. Heat oil in a saucepan and add onion, spinach and dill. Cook on high for 2 minutes until onions soften. Remove and cool. Combine the cooled spinach mixture with feta, eggs and salt and pepper. Set aside.
Stack 6 sheets of phyllo on top of each other. Cut into 5 equal strips. Work with 1 pile of phyllo at a time. Wrap remaining phyllo up in tea towel . Brush 1 strip with butter and cover with a second strip and butter again.* Note if using a thicker kind of phyllo use only one sheet per triangle. Lay strip down vertically in front of you.
Spoon a heaping teaspoon of filling in bottom corner of strip and fold over in half diagonally creating a triangle. Continue folding over into triangular shape until you reach end of strip. Repeat with remaining strips. Brush tops with a little more olive oil.
Place triangles on a baking sheet and bake at 375 D in middle rack of oven for about 20 minutes or until golden.
Serve warm as appetizer or along with your main course.
Makes about 20 triangles

Lady... I made these today. I have never felt so defeated and accomplished in all my life. After I screwed up a couple triangles I finally got the "feeling" of the humidity the filo needs, and the very careful hand I need. Still, it took quite some time to get these done. I made enough to freeze half, which is great because I don't always have this kind of time. I actually added some dried wild oregano and just a teaspoon of Greek yogurt to my eggs before mixing the filling. So amazing. I've never known what adding "love" to a dish felt like until now. My triangles had plenty of love and tasted so great! I would encourage anyone who is afraid to try this to do it, it's all about patience and a steady hand. But, the rewards more than outweigh the struggles starting out. Thanks again!

They came out pretty great... after the first 2 or 3 i learned not to saturate the edges of the dough with butter. It makes them easier to fold that way. I think I also hesitated on filling them too much for fear they would break open. They could have used a touch more filling. As far as the flavor... yumm... very good. Looking forward to watching more videos and trying new dishes. You are a pleasure to watch and are very detailed. Thank you Christine and have a great rest of the week.

Great job with the video, Christine! Thank your mom for sharing her excellent recipe! I grew up with Pennsylvania Dutch cooking and I regret that my mother never took the time to write down her recipes. It was next to impossible to learn from her because she just eyeballed amounts too. I have been able to salvage some of their unique specialties by purchasing the little cookbooks created by ladies (and a few gentlemen, too!) in various tiny Farm Bureau association in that area. It would be pretty tragic to lose our various heritages and I really appreciate you taking the time to share yours. Many thanks!

I'm glad you explained the importance of using butter. I followed another recipe brushing with egg whites & the triangles did not crisp up. They puffed up but when cooled they collapsed & looked like a ravioli with a lump in the middle. Not a pretty sight. I think I'll try this way next, make them smaller & not press down the edges.

OMG I did these triangles and came out really good, better than any spinach pastry I had bought on a bakery. I am thinking to do it again for a potluck at work . they came out really good the only issue I had was that they didn't come out as golden as yours and I even get them more time on the oven, I was afraid they could burn so I even wet them outside with butter, buy mine came a little less fluffy than your, they tested good and were completly done. don't know if I has to put my oven in conventional oven instead. Do you usually used a conventional oven? Please, let me know. The triangle are not that complicate to do. They are worthy the time to do it. Thank you, love the recipe and the taste
@ChristineCushing
@ChristineCushing Жыл бұрын
That is so great ! The triangles are a constant favourite in our kitchen. Yes, to get that golden exterior, the convection really helps because it circulates the heat around the pastry. We also make them in larger batches and freeze them raw, very well wrapped in plastic wrap , for easy baking in the event that we need a triangle fix or for any drop in guests. Thank you

@@GiseleCline oh that’s super exciting. I too will be making them next week. Once made , I wrap them wrapped tightly in plastic to prevent freezer burn. I always line baking sheet with parchment paper and then just remove the wrap and bake raw from frozen. They might take a few extra minutes . If you are going to stack them , you absolutely must separate each layer with parchment paper or they will stock together during freezing. I hope this helps .

Hi Christine. I just found this recipe and I am trying it today. I started with three bunches of fresh spinach which cooked down to one cup. When you say 1 cup of spinach, do you mean raw or cooked. If cooked should I triple the recipe? Thanks so much

Hi Christine!!! They worked out just fine! DELICIOUS! But I used olive oil in stead of butter between the layers. I still have some filo dough left... and guess what I'm having tomorrow night again? LOL I first heard about this dish watching "My Big Fat Greek Wedding", and got very curious about it. And searching for the recipe I came across you chanel here on youtube. Thanks a lot! :)

can I add a little cottage cheese to cut the salt of the feta even further, or will it make them too soggy? Thanks great video!
@ChristineCushing
@ChristineCushing 9 жыл бұрын
+Vessy Hi Vessy. Instead of cottage cheese we use ricotta cheese to cut the saltiness as the cottage cheese will make them soggy. Try that out and let me know how they work.. :)

This is ine of my favorite food... i like it crunchy and dry. All these ingredients here is a must!!! I just also add some milk.. for this amount i would use like 100ml milk not fresh the contensed.. i dont know how it works but it gives all ingredients a push up.. without milk its also very tasty but more dry..you can feel how dry each ingredient is.. with milk its more sooth.. i cannot explain it but i would recommend some milk.. just a little to get all ingredients wet.. there would be no fluids running as eggs will work again perfectly to tie the ingredients together.. I also use dry onion.. cause also dry onion makes it more sweet rather than feeling there are only dry vegetables inside.. cause dry onion if cooked gets sweet.
