Spanish squid stew

To make the Spanish squid stew, we will need:
- 370 gr of fresh or frozen squid,
- 750gr of potatoes,
- 1 onion,
- 2 cloves garlic,
- 3 tablespoons of tomato puree,
- 125ml. white wine,
- 1 teaspoon of paprika,
- 2 bay leaves,
- saffron, coriander, olive oil and salt.
To start the preparation of the Spanish squid stew recipe, we will start with:
Peel and cut the garlic cloves, onion and potatoes.
Cut the squid into pieces according to their sizes,
Heat a drizzle of olive oil in a pan,
Brown the garlic first and sweat the onion.
Add the squid pieces and cook for 5 minutes. approximately,
Add the 3 tablespoons of tomato puree and the teaspoon of paprika, cook for 5 minutes.
Add the white wine and let reduce for 5 minutes.
Add the potatoes and cover with water.
Add a little saffron and bay leaves. Mix and cook for about 20 mins.
At the end of the cooking add a little cilantro, chop, mix and leave to rest for a minute before serving.
