Lookin pretty dank my dude. If you want halfway between wrapped and unwrapped order you a roll of pink butcher paper from Amazon, it's pretty inexpensive. Meat will be more tender than unwrapped and less tender than wrapped. That's cause the paper breathes a little and the meat doesn't steam as hardcore as it does in foil.

He confused the wrapped and the unwrapped and I think I would prefer the unwrapped because they would be easier and maybe cooked less time.

Nice racks. I really don't care , if it's wrap or not . knowing your pit and knowing how to grill is key. Nice job , far as briskets that the test foil or butcher paper. I feel you on bbq sauce for me it all depends on my vibe. Going back to the ribs the unwrapped one had a better bark. But you gotta know when to pull it . 2 dark of a bark can taste bitter.
