My go to marinade is (50/50 shoyu & sugar) sesame oil, chili flakes or Hawaiian 🌶, less sugar if you don’t like it caramelized, and no water for 🐷

Fav vid so far brah. Eh your recipe looks great. I been smoke fish over 30 yrs my recipe is same. Whatever I got. And my wife same too, question my outcomes cause I no measure. Awesome my braddah.
Whenever I used to smoke fish down in Florida. I always just seasoned it with garlic and cajun seasoning then coated the meat with olive oil. Leave the skin and scales on to lay flat for a smoked fish dip. But if you're doing it for like a fish jerky. I would use quarter cup apple cider vinegar quarter cup salt quarter cup sugar per gallon of water. Soke for 12 to 24 hours. Then pat dry with paper towels season with what you like. and put in smoker.

And when I smoke fish cut from the dorsal fin to the belly but leave the belly intact so you have a nice big butterfly fish. 3 to 6 hours depending on thickness. For smoked fish dip. For smoked fish jerky 8 + hours depending on the thickness.

soft brown sugar, and salt is what we use here in nz, dry rub, i find the head and wings of the trevalley are the best parts to smoke, also smoke with the skin on as most of the fats are against the skin brother

Equal parts shoyu and sugar. Some sort of acid like lemon or lime juice, some sort of emulsifier like sesame oil. Chili, ginger, and garlic. Black pepper optional. Marinade overnight

Is that an aluminium rob allen roller or carbon? I have a carbon 110 rob allen roller with a coatesman single roller muzzle and it balances perfectly with 7mm shaft. Gonna try a 7.5mm, I reckon it'll take it too. The coatesman rollers are super light and compact.

@@fishhunter348 it’s carbon 7,5 mm shaft. In my opinion very bad balanced speargun. Ideally you shouldn’t “change” anything from a gun to perform well. Great shot but awful balance.

do the orange chicken sauce from panda express (there is a video on youtube), but instead of orange juice use lime or lemon juice (lime is better though) and I prefer using worcestershire sauce instead of soy, but either way amazing with any fish and will probably be your go to sauce with fish for years. I know its not a brine but it reminded me when I saw you make your brine.
