The way you strike a balance between the sport and adventure of fishing and then the preparation of the fish as food is just brilliant. Fresh fish from the ocean is such an amazing basis for a meal - it can be delicate and subtle or full of strong flavors, depending on the type of fish and the method and style of preparation, and you show it all. Took your advice on "brain and bleed" and I have to say the braining makes a HUGE difference. I have always bled fish but never brained. Sunday with my first few fish of the season here in CT, I brained them and the texture of the flesh is SO much better! Thank you for everything you do! You are an inspiration!

I'm loving the Belize videos. Looks like San Pedro has grown a LOT in the 30 years since I was there. The Madonna song La Isla Bonita, the pretty island, was written about that place. It surely was beautiful when I was there. If you ever want to check out Costa Rica I'd be happy to go with and show you around. I lived there for 9 years and speak local slang and regular Spanish fluently. And I have friends there. The reef is very close to shore on the Caribbean side, you can swim to it. It was a lot like Belize when I was there, very clear. We caught fish trolling lures and it seems like there are lots of fish around. I lived on the Pacific side down near Panama where there are plenty of fish. You could shoot tuna and mahi 3 miles from the beach. If you didn't dive the national park near Ambergris you need to go on your next trip. Trust me. You didn't know hogfish got so huge. Nassau grouper too. Awesome place.

The Sushi experience was worth the entire video. Now I'm craving Sushi! Now, to help you out with how to remember which is which (stalagmite or stalactite), it's easy. A 'stalactite' hangs from the ceiling. It's easy to remember because it has to 'hang on tight'... Get it? (I can't lie, I learned that many years ago while visiting a cave, and out tour guide is the one who came up with that little ditty).

Very similar to Abu Dhabi shallow waters! Where government dig a canals for big ships to enter shallow waters, there’s caves along sides of the dig , lots of live and formations where fish can hide… great skills to come out with a fish in such a place … those who don’t know it seems to be easy Great stuff 👌🏻
