Just happened upon your channel and have been watching tons of your content over the past few days. As a professional chef of 37 years, an avid fisherman, and overall lover of the sea and everything in it… I am so appreciative of your care for fish species, selection and not being greedy by overfishing a spot. Most of my culinary journey has been in the islands over the years and the only fishermen I supported at my properties were the guys like you. Family had a home in sugarloaf many years ago and try and get down there as much as I can. I’d like to connect with you at some point in the future and do a trip and get some new recipes in your book! Keep up the awesome content!

Also. Got a great grouper or scamp recipe for you. Pan sear the fish with your favorite seasoning in butter and top with the following butter rum sauce. 1/2 cup of rum cooked down for two minutes. Add 1/4 cup brown sugar and 4 tablespoons of butter. Add cracked black pepper and a 1/2 tsp of soy sauce. Reduce until slightly thickened and pour over fish. It’s amazing!

I chuckled about your relaxed view of being nipped by morays. Quite some years ago my young son and I did a scuba dive in a sweet marine sanctuary. Our guide was feeding sardines to a large moray. When he moved on the eel came out to see if we'd feed him. We swam backwards to the surface with the eel about knee high the whole time. Pretty funny over a few Beliken beers.

Free diving with my dad in the Canal Zone, Pacific side and he took me over to "Super Secret". Had to triangulate land markers, like the coconut tree, get it under the fire hydrant and the church on the hill had to be under the house on the water line, that kinda GPS, anyway we got on the rocks and anchored up. Geared up and before we jump in, he says, do not gut shoot the fish, they will leave, so we swim over to the rocks, I take a breathe and down I go, a whole school of Crimson Snapper come up and WHAMO, pop one, right in the gut, get to the surface and the old man is hot. So he heads down and I hear the gun go off and up comes the old man and with his "gut shot" snapper. Just looked at me and said "not a word, boy.". Musta been that been grin on my face. Nice vid.

I really enjoy the full dives without the edits (from surface to bottom) as it gives me a better idea regarding ur bottom time and the techniques you employ . Love the uploads I feel like I learn a lot from watching a pro like you. 🤙

@@KeyWestWaterman If you're curious - it would be nice to put a GoPro on your gun and point it back to yourself while diving. It would really give us a better view on your freediving technique, equalizing, etc. Thanks again for doing what you do.

I'll say something about that knife. It is the exact knife I used in one of the busiest restaurant in Waikiki. The fish cutter ran the whole kitchen, and that knife was his (or her) badge of office. Mine was the same but with a rose wood handle that was modified. Mine was different because I was the guy that trained everybody. We handled about 3 to 5 hundred pounds of high end sushi grade ahi, Ono, opah, and snapper every day. That knife is not overkill; it was the only chef knife we used--- from breaking to fabrication to slicing garlic. Once it becomes part of your hand you will understand. The guy that gave it to you knows what I'm talking about. And that is why he gave it to you. He must love you very much to do so and feels as I do, that you deserve it

Around the time of this video that years lobster season, me and my family went down there and fished off a popular hill in The Atlantic at night and we had 6 people in the boat and limited out in about an hour. Also had a 12 foot lemon shark almost come in the boat. Most rememberable trip

I will eat it don't get me wrong, but if I have a choice I'd choose other snapper. and greatly depends on the size of the mutton. the smaller ones are much better. I think the big ones can be a little dry and chewy at times. probably more my fault as the chef than the fish itself!
