Ever since my favorite Chinese restaurant closed 3-years ago, I've been looking for a simple recipe to duplicate their incredible beef-fried rice, which no other restaurant in the area seems capable of doing. This recipe looked simple enough to adjust for beef-fried rice without eggs (allergy) and was I wonderfully surprised. Not only was it rather easy to follow, but at my home we now have the very best tasting beef-fried rice anywhere! Thank you Sisi Jeminah.

I would leave out the additional salt, and use a low sodium soy sauce personally (more due to a sodium sensitivity), but otherwise I wouldn’t change anything! This looks wonderful.

Many people think that fried rice is recipe dependent. They think if they have a good recipe, then they will automatically be able to produce good fried rice. In fact, that's far from being true. Good fried rice you have in the Chinese restaurants is actually a real test of the wok skill of the cook. If the cook can make a good fried rice, then he/she can normally make any nice stir-fried dishes. A good cook can make a very nice flavorsome fried rice with just egg and spring onion in the recipe.

Looks tasty.. I lived in China for some years. We would come out of the bars at midnight and there would be mobile sidewalk vendors with simple gas stoves and gnarly old woks, slamming out big bowls of "YangZhou Chao Fun" (Yang Zhou is a city.. Chao fun means fried rice).. differs from here in that there was more rice... more egg... no carrots or garlic... rapeseed oil was used, and for pork they threw in generous helpings of cubed-up Spam-type meat. Lots of salt and MSG, of course.. It was awesome when smashed on Chinese Moultai liquor
