Ingredients:
For Marination:
1 Kg Mutton
2 tbsp Ginger Garlic Paste
1 cup curd
2-3 Green Chillies
1 tbsp Red Chilli Powder 🌶
1 tsp Cumin Powder
2 tbsp Coriander Powder
Salt 🧂 to Taste
1 tbsp Ghee
Hand full of Coriander Leaves 🍃
For Gravy:
4-6 tbsp Ghee
1-2 Black Cardamom
4-5 Black Pepper 🌶
2-3 Cloves
1 Bay leaf
1 inch Cinnamon
5-6 Onion 🌰 (sliced)
For Masala:
4 tbsp Coriander Seeds
1 tsp Cumin Seeds
1 Mace
5-6 Black Cardamom
2 tbsp Black Pepper 🌶
3-4 Cloves
5-6 Green Cardamom
2 inch Cinnamon Stick
½ tbsp Salt 🧂
2 tbsp Ghee
1 tbsp Prepared Masala
Few Coriander leaves 🍃
For Garnish:
Coriander Leaves 🍃
Method:
For Marination:
In a large mixing bowl, add mutton, ginger garlic paste, curd, green chilli, red chilli powder cumin powder, coriander powder, salt to taste, ghee, coriander leaves and mix well
and keep it aside.
For Masala:
In a pan, add coriander seeds, cumin seeds, mace, black pepper, cloves, green cardamom,
cinnamon stick, salt, and dry roast them well, cool it down, and then grind it into a powder.
For Gravy:
In a large pot, heat ghee, add black cardamom, black pepper, cloves, bay leaf, cinnamon, and saute it.
Add onion and saute till its light golden brown in colour.
Add marinated mutton into the potand mix well, add salt to taste, and mix well.
Add the required water and prepare masala into the mutton and mix well.
Cover it with the lid and cook it 20-25 minutes.
In a pan, add ghee and prepared masala and mix well, now add this mixture into the mutton and mix well.
Garnish with coriander sprig and serve hot with rice or roti.
