I cover my breads with a tea towel while they cool, seems to help keep the crust soft.

Beautiful loaf, lots of fruit! I will have to give this one a go. I have bread pans exactly like yours, butter is the only thing that seems to work with the coating on the pan.

I am not sure what is available internationally. The main ingredient seems to be as ascobic acid. I like that it gives the bread a softer fluffier texture!
